Balushahi | Badusha

Balushahi | Badusha is a very popular Indian sweet or mithai. It is also known as Bhadusha, Badushah, Khurmi in different parts of the country. This uses refined flour, ghee/clarified butter, curd, little baking soda. The disk of dough is deep fried then soaked in the sugar syrup to make this yummy sweet. It is flaky and crisp from outside and soft from inside. This is a famous and one of the most lovable festive sweet all over India. This is very easy to prepare with fewer ingredients. You can easily make it at home without ay hassle. So, try to make this mouthwatering sweet at home and enjoy with your loved ones.

Tips and Suggestions by Mom Chef:-

  • Moyan of ghee is important for flaky texture.
  • Knead a semi soft dough to make Balushahi.
  • You can add colour or saffron to the dough. If you are using saffron for colour then soak the saffron in little water then add to the dough.
  • The consistency of the sugar syrup should be 1 & 1/2 string.
  • You can add cardamom powder to the syrup for flavouring.

Ingredients

  • INGREDIENTS FOR THE DOUGH:-
  • Refined flour - 1 Cup
  • Ghee/Clarified Butter - 2 to 3 Teaspoon
  • Curd - 2 Teaspoon
  • Baking Soda - a pinch
  • Yellow Food Colour or Saffron - a pinch (optional)
  • Oil - for frying
  • INGREDIENTS FOR SUGAR SYRUP:-
  • Sugar - 1 Cup
  • Water - 1/2 Cup
  • OTHER INGREDIENT:-
  • Sliced Pistachios - as required for garnishing

Instructions

  1. PREPARING SUGAR SYRUP:- Take a pan, add sugar and water and heat it. Keep stirring it until sugar is dissolved. Make 1 & 1/2 string consistency sugar syrup. Once done, switch off the gas.
  2. PREPARING BALUSHAHI:-
  3. Take a bowl and add refined flour, ghee/clarified butter, curd, a pinch of soda, a pinch of yellow food colour. Mix well to make a semi soft dough.
  4. Knead the dough for couple of minutes to make it smooth. Then divide the dough into equal parts.
  5. Make cylindrical shape of the dough then fold it to make a disk shape. Seal the edges properly.
  6. Meanwhile, heat oil for frying.
  7. Once the oil is medium hot, fry the balushahi on a low flame.
  8. Keep turning them. When the colour changes to nice golden brown from both the sides take them out. Put them in sugar syrup immediately.
  9. Keep the balushahi in the syrup for atleast 3 to 5 minutes. Then take them out. Garnish with sliced pistachios.
  10. Delicious 'Balushahi | Badusha' is ready to be served.
