Besan Lauki Sabji is a must try recipe. A perfect and easy to cook sabji for dinner or lunch. Gram flour with lauki makes it a palatable dish for everyone. Lauki/Bottle gourd, it is rich in vitamins and minerals. It is very beneficial for the heart. By making this dish you can include it in your diet. Preparing this dish requires few and simple ingredients. It requires regular spices like red chili powder, dry mango powder, turmeric powder, fenugreek seeds etc which are easily available on your kitchen shelf. Ingredients

  • Oil - 1 tablespoon
  • Mustard seeds/Rai - 1/2 teaspoon
  • Cumin seeds/Jeera - 1/2 teaspoon
  • Fenugreek seeds/Methi dana - 1/4 teaspoon
  • Asafoetida/Hing powder - a pinch
  • Bottle gourd/Lauki - 1/2 chopped
  • Turmeric powder/Haldi powder - 1/2 teaspoon
  • Salt - to taste
  • Red Chili Powder/Lal Mirch Powder - 1/2 teaspoon
  • Dry Mango Powder/Amchur Powder - 1/2 teaspoon
  • Gram flour/Besan - 1 tablespoon
  • Water - as required
  • Coriander leaves - chopped to garnish

Instructions

  1. Heat oil in a pan. Then add the mustard seeds, cumin seeds, fenugreek seeds and a pinch of asafoetida powder. Saute well.
  2. Put the chopped bottle gourd/lauki in the pan. Mix well. Cover and cook on low flame for 5 to 7 minutes.
  3. After 5 to 7 minutes check the bottle gourd/lauki, as it is softened, add all the spices. Put the turmeric powder, salt to taste, and red chili powder. Then add the dry mango powder, and gram flour. Mix well.
  4. Add water in little quantity. Mix well. Cover and cook on low flame for 2 to 3 minutes. Garnish with coriander leaves.
  5. The Besan Lauki Sabji is ready to be served.
