Besan Pitla | Besan Sagoo is a unique and traditional Maharashtrian and Telangana dish. 

Besan Pitla | Besan Sagoo is a simple, easy, and super quick recipe prepared from besan (gram flour) and onions. A spicy base of green chilies, onions, potato, peas, is cooked with gram flour and water until thick. This is a traditional recipe, that is very simple but has a unique taste and texture. It is the perfect recipe to make when you don’t have any vegetables at home or for the busy days. In this pitla we used some veggies to make it more nutritious. Serve it with bajra roti or jowar roti or dosa or puri or even rice. Try to prepare this delicious recipe at home and enjoy it with family and friends. Do share your feedback in the comment section.

Tips and Suggestions by Mom Chef:-

  • The batter should have a watery flowing consistency.
  • Sprinkle water in batches to besan, else besan will turn thick.
  • Generally, pitla is prepared from only onion, garlic, green chili, but you can also add veggies of your choice.
  • Use fresh coriander leaves to garnish it.
  • Adjust the spices as per the requirement.
  • Pour besan batter little by little to avoid lumps.
  • Pitla should have a thin consistency as it becomes thick after cooling down.
  • Serve it hot for the better taste.

Ingredients

  • Oil - 1 tablespoon
  • Rai/ Mustard seeds - 1 teaspoon
  • Jeera/ Cumin seeds - 1 teaspoon
  • Haldi powder/ Turmeric powder - a pinch
  • Hari mirch/ Green chili - 2 chopped
  • Curry patta/ Curry leaves - 4 to 5
  • Hing/ Asafoetida - a pinch
  • Pyaaz/ Onion - 2 medium-sized finely chopped
  • Boiled Aloo/ Potato - 2 medium-sized finely chopped (optional)
  • Namak/ Salt - as required
  • Besan/ Gram flour - 2 tablespoons
  • Water - as required
  • Hara matar/ Green peas - 1 cup (optional)
  • Dhaniya patta/ Coriander leaves - a fistful finely chopped
  • Nimbu ka ras/ Lemon juice - 1 teaspoon

Instructions

  1. Heat oil in a pan and add mustard seeds, cumin seeds, turmeric powder, green chili, curry leaves, hing, and onion. Sauté well.
  2. Add boiled potato, green peas, and salt. Sauté and cook for a minute on a low to medium flame.
  3. Meanwhile, take besan in a bowl and add some water to it. Mix it properly to avoid lumps. The batter should be of watery or flowing consistency.
  4. Now, pour the besan batter into the pan little by little and stir it continuously. Allow it to cook for 2 to 3 minutes.
  5. Garnish it with coriander leaves and turn off the flame.
  6. Add a dash of lemon and mix it.
  7. Delicious ‘Besan Pitla | Besan Sagoo’ is ready to be served.
