Bharva Baingan Aloo Pyaaz

Bharva Baingan Aloo Pyaaz is a simple and delicious stuffed brinjal, onion, and potato dish.

Bharva Baingan Aloo Pyaaz is easy and flavored brinjal, potato, and onion based semi-curry made with a unique blend of masala. There are various types of brinjals and here I used medium-sized purple brinjal. Stuffed brinjal, potato, and onion based recipes are very common and are made with different types of stuffing. It is mainly served with roti, chapati, or different types of naan, or rice.  Stuffing masala preparation can vary by the flavors and spices you like. Grated coconut plays an important part in the stuffing. Many people use roasted peanut powder or roasted sesame powder instead of coconut. It is so tasty and can be served for lunch as well as dinner. So, try to prepare it and enjoy it with your family. Let us know your feedback.

  • If fresh coconut is not available it can be replaced with dry grated coconut.
  • The stuffing can be stored in an airtight container in the refrigerator for 3 to 4 days.
  • The spiciness can be adjusted to taste.
  • It should be served hot for a better taste.

Ingredients

  • Nylon sev/noodle type crispy snack- 2 tablespoon
  • Fresh coconut - 2 tablespoon, grated
  • Garlic - 5 to 6 cloves, finely chopped (optional)
  • Green chili - 1 teaspoon, finely chopped
  • Ginger - 1 teaspoon, finely chopped
  • Salt - as required
  • All Spice Mix/Garam masala - 3 teaspoon
  • Sesame seeds - 1 teaspoon
  • Dry Fenugreek Leaves/Kasuri methi - 2 teaspoon
  • Sugar - 1/2 teaspoon
  • Potato - 3 small-sized, with cross-shaped vertical slits made in each of them, 3/4th way down.
  • Brinjal - 2 small-sized, with cross-shaped vertical slits made in each of them, 3/4th way down.
  • Onion - 1 small-sized, with slits in it, 3/4th way down.
  • Oil - 2 tablespoon
  • Mustard seeds - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Sesame seeds - 1/2 teaspoon
  • Hing/asafoetida - a pinch
  • Tomato - 1 big-sized, finely chopped
  • Water - as required
  • Turmeric powder/Haldi powder - 1/4 teaspoon
  • Red chili powder/Lal Mirch Powder - as required
  • Coriander powder - 1/2 teaspoon
  • Coriander leaves - 1/2 teaspoon, finely chopped

Instructions

  1. To prepare the stuffing, add nylon sev, coconut, garlic, green chilli, ginger, salt, garam masala, sesame seeds, sugar, and kasuri methi in a bowl and mix well.
  2. Peel the potato and peel it and make cross-shaped vertical slits in it, 3/4th way down and fill the stuffing in it.
  3. Make cross-shaped vertical slits in the brinjal, 3/4th way down and fill the stuffing in it.
  4. Peel an onion and make a slit in it, 3/4th way down.
  5. Heat oil in a pressure cooker.
  6. Add and sauté well mustard seeds, sesame seeds, cumin seeds, ginger, garlic, green chili, asafoetida, and kasuri methi.
  7. Add tomato and the stuffing in the pressure cooker.
  8. Add stuffed potato, brinjal, and onion in it.
  9. Add water, as required for a thick consistency.
  10. Add turmeric powder, red chili powder, coriander powder, garam masala, sugar, and salt. Sauté and cover the lid until one whistle occurs. Keep the flame medium.
  11. Now, turn off the flame and wait until the steam is released from the pressure cooker.
  12. Transfer to a serving bowl and garnish with coriander leaves.
  13. Delicious 'Bharva Baingan Aloo Pyaaz' is ready to be served.
