Bharwa Baingan Aloo | Gujarati Bharela Ringan Bateka Nu Saak is the heirloom dish of Gujarat.

Bharwa Baingan Aloo | Gujarati Bharela Ringan Bateka Nu Saak is a popular sabzi from Gujarati cuisine. It is a simple and interesting sabzi. You can prepare this curry with ringan (brinjals), masala, and regular spices.  A tasty masala is a mixture of peanuts, sesame seeds, and spices which are stuffed in brinjals. The spicy stuffing tastes amazing with onion and potatoes. It goes well with roti, paratha, and chapati, and even with rice also. Tips and suggestions by the Mom Chef:

  • To choose fresh brinjal: Take brinjal with green stem.
  • You can use any type of brinjal to prepare this sabji.
  • Instead of baby potatoes, use regular-sized potatoes, just quarter them.
  • If you want, you can add tomato puree instead of grated tomato.
  • Sabji can be prepared in kadai instead of a pressure cooker.

Ingredients

  • FOR PREPARING STUFFING :
  • Peanut powder / मूंगफली पाउडर - 4 Tsp
  • Roasted sesame seeds powder / तिल पाउडर - 3 Tsp
  • Turmeric powder / हल्दी पाउडर - 1/2 Tsp
  • Red chilli Powder/ लाल मिर्ची पाउडर - 2 Tsp
  • Coriander powder / धनिया पाउडर - 2 Tsp
  • Cumin seeds powder / जीरा पाउडर - 1 & 1/2 Tsp
  • Salt / नमक - As per taste
  • Coriander leaves / हरा धनिया - A handful
  • Garlic paste / लहसुन की पेस्ट - 1 Tsp
  • Oil / तेल - 1 Tsp
  • FOR PREPARING BHARWA ALOO BAINGAN :
  • Brinjal / बैंगन - 5 to 6
  • Oil / तेल - 1 Tbsp
  • Mustard seeds / राई - 1/2 Tsp
  • Cumin seeds / जीरा - 1/2 Tsp
  • Asafoetida / हिंग - A pinch
  • Baby potato / आलू - 4 to 5 Peeled
  • Tomato / टमाटर - 2 Grated
  • Water / पानी - As required
  • Onion / प्याज - 1 Cut into halves
  • Tsp = Teaspoon
  • Tbsp = Tablespoon

Instructions

  1. FOR PREPARING STUFFING :
  2. Take peanut powder, roasted sesame seeds powder, turmeric powder, red chilli powder, coriander powder, cumin seeds powder, salt, coriander leaves, garlic paste, and oil in a bowl. Mix well. Keep it aside.
  3. FOR PREPARING BHARWA BAINGAN ALOO :
  4. Take washed brinjal. Make 2 slits like a cross on each one so that the base stays attached.
  5. Stuff the prepared stuffing masala in the brinjal with your hands. Likewise, prepare all the brinjals. Keep it aside.
  6. Meanwhile, heat the oil in a pan. Add mustard seeds, cumin seeds, asafoetida, and potato. Mix well. Roast it for 2 to 3 minutes on medium flame.
  7. Now add stuffed brinjal and leftover masala. Mix well. Then add grated tomato and little water. Mix well.
  8. Add onion and mix well. Let it boil. Now close the pressure cooker and let it cook for 1 whistle on a high flame. Then let it cool down completely. Once done, take it out to a serving bowl.
  9. 'Bharwa Baingan Aloo | Gujarati Bharela Ringan Bateka Nu Saak' is ready to be served.
