Ingredients

  • Mustard oil / Sarso ka tel - 3 Tablespoons
  • Bay leaf / Tej patta - 1
  • Cumin seeds / Jeera - 1 Teaspoon
  • Whole coriander seeds / Sabut dhaniya - 1 Teaspoon crushed
  • Green chilli / Hari mirch - 2 Slited
  • Ginger-garlic paste / Adrakh-lahsun ka paste - 1 Teaspoon
  • Salt - As per taste
  • Onion / Pyaz - 1 Finely chopped
  • Tomato puree / Tamatar puree - Of 2 tomato
  • Red chilli powder / Lal mirch powder - 2 Teaspoon
  • Turmeric powder / Haldi powder - 1/2 Teaspoon
  • Coriander powder / Dhaniya powder - 1 Teaspoon
  • Cumin seeds powder / Jeera powder - 1 Teaspoon
  • All spice mix powder / Garam masala - 1 Teaspoon
  • Dry fenugreek leaves / Kasuri methi - 1 Teaspoon + For garnishing
  • Coriander leaves / Hara dhaniya - A handful + For garnishing
  • Boiled potato / Aloo - 3 to 4 Peeled and chopped
  • Water - As required

Instructions

  1. Heat oil in a pan. Add bay leaf, cumin seeds, whole coriander seeds, green chilli, and ginger-garlic paste. Mix well.
  2. Then add onion. Mix well and saute it for 1 to 2 minutes on medium flame.
  3. Now add salt and mix well. Add tomato puree. Mix well.
  4. Add red chilli powder, turmeric powder, coriander powder, cumin seeds powder, and all spice mix powder. Mix well and boil it for 2 to 3 minutes on high flame.
  5. Then add dry fenugreek leaves and coriander leaves. Mix well.
  6. Now add potato. Mix well and add little salt and water. Mix well and cook it for 3 to 4 minutes on high flame.
  7. Once done, garnish it with coriander leaves and dry fenugreek leaves. Take it out to a serving bowl.
  8. 'Tari Wale Aloo | Tari Wali Aloo Ki Sabji' is ready to be served.
