Ingredients

  • Oil - 3 to 4 teaspoons
  • Mustard seeds - 1 teaspoon
  • Dry red chili - 1
  • Urad dal/ split and husked black gram - 1 teaspoon
  • Chana dal/ split chickpeas - 1 teaspoon
  • Hing/ asafoetida - a pinch
  • Curry leaves - few
  • Salt - 2 teaspoons
  • Turmeric powder - 1 teaspoon
  • Vangibath powder -3 teaspoons
  • Tamarind paste - 1 teaspoon
  • Capsicum and Brinjal - 1/2 kg
  • Desiccated coconut - 3 teaspoons

Instructions

  1. Heat oil in a pan and add mustard seeds, urad dal, chana dal, hing, and dry red chili. Saute it.
  2. Add curry leaves, capsicum, and brinjal. Saute it well for 5 minutes.
  3. Now, add salt and turmeric powder. Mix it well and close the lid. Cook it for 5 minutes.
  4. Add tamarind paste and vangibath powder and saute it.
  5. Further, add desiccated coconut and mix it well.
  6. Transfer it to a serving bowl and garnish it with desiccated coconut.
  7. Delicious Capsicum And Brinjal Curry is ready to be served.
