Chhole | Punjabi Chole is a mouthwatering dish served with Bature across India.

Chhole | Punjabi Chole is one of the favourites and delicious dish of Indian cuisine. Everyone loves to have this popular street food. This is one of the most famous curries in Indian Cuisine. Just the mention of it makes one drool over this mouthwatering curry. You can easily prepare this curry at home using easily available ingredients. Ingredients

  • Chhole/Chickpeas/Kabuli Chana - 1 Cup
  • Onion - 1
  • Tomato - 1
  • Ginger - 1/2 inch piece
  • Green Chilli - 1
  • Mustard seeds - 1/2 Teaspoon
  • Asafoetida/Hing - a pinch
  • Salt -as per taste
  • Red Chilli powder - 1/2 Teaspoon or as per taste
  • Coriander Powder- 1 Teaspoon
  • Roasted Cumin Powder - 1/2 Teaspoon
  • Garam Masala/All Spice Mix - 1/4 Teaspoon
  • Anardana Powder/Dried Pomegranate Seeds - 1/2 Teaspoon
  • Chhole Masala - 1/2 Teaspoon
  • Kasuri Methi/Dry Fenugreek Leaves - 1/2 Teaspoon
  • Oil - 1 to 2 Talespoon

Instructions

  1. Soak chhole/chickpeas overnight. Then pressure cook it for 4 to 5 whistle along with bay leaf and salt.
  2. Take a grinder jar and add chopped onion, tomato, ginger, green chilli. Grind to make smooth puree.
  3. Now, heat oil in a kadai or pan.
  4. Add mustard seeds, asafoetida. Then add above ground paste. Mix well and cook on a medium flame.
  5. Once the oil leaves from sides, add salt, red chilli powder, coriander powder, roasted cumin seeds powder, garam masala, anardana powder, chhole masala. Mix well and cook for a minute on a low flame.
  6. Add boiled chickpeas by keeping some chickpeas aside . Mix well and cook.
  7. Add the remaining water from the chhole and mix.
  8. Mash the remaning boiled chickpeas (which we kept aside) and add to the pan. Mix well.
  9. Crush the kasuri methi between the palms and add to the pan. Cook it for a minute then switch off the flame.
  10. Delicious 'Chhole | Punjabi Chole' is ready to be served with Bhature.
