Cucumber Poha is an instant evening snack idea.

Cucumber Poha is a healthy dish. It is a delicious recipe prepared from poha, cucumber, peanuts, and some spices. Cucumber is one of the key ingredients added to this recipe. Flattened rice is a good source of complex carbohydrates and B vitamins. It also contains a lot of iron. It is comfort food and since it is light on the stomach, it can be had for any meal of the day. Ingredients

  • Flattened Rice / Poha - 1 Cup
  • Water - As required
  • Cucumber / Kheera - 1 Grated + 1 finely chopped
  • Oil - 1 tbsp
  • Mustard Seeds / Rai - 1 tsp
  • White Gram / Urad Dal - 1 tsp
  • Bengal Gram / Chana dal - 1 tsp
  • Ginger / Adrak - 1 Inch grated
  • Green Chilli / Hari Mirchi - 1 to 2 Finely chopped + 2 whole
  • Roasted Peanuts / Mungfali - 1/4 Cup + For garnishing
  • Curry Leaves / Curry Patta - A few
  • Salt - As per taste
  • Chaat Masala - 1 tsp
  • Sesame Seeds / Til - 1 tsp
  • Coriander Leaves / Hara Dhaniya - A handful
  • Lemon Juice / Nimbu Ka Ras - Of 1 Lemon
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Wash the poha in the sieve. Then keep it aside for 10 to 15 minutes to rinse the water. Then add grated cucumber and mix well.
  2. Heat oil in a pan. Add mustard seeds, urad dal, and chana dal. Saute it for a few seconds on medium flame. Keep stirring occasionally.
  3. Now add finely chopped green chilli, ginger, and roasted peanuts. Mix well. Then add curry leaves by breaking them and finely chopped cucumber. Mix well.
  4. Further, add the prepared poha and mix well. Add salt, chaat masala, sesame seeds, and whole green chilli. Mix well.
  5. Then add coriander leaves and mix well. Add lemon juice and turn off the flame. Mix well.
  6. Once done, take it out to a serving plate. Garnish it with roasted peanuts.
  7. 'Cucumber Poha' is ready to be served.
