Ingredients

  • Lady finger / Bhindi - 250 gms Cut into long pieces
  • Oil - As required
  • Cumin seeds / Jeera - 1/2 tsp
  • Asafoetida / Hing - A pinch
  • Onion / Pyaz - 1 Finely chopped
  • Crushed ginger-garlic-green chilli / Adarak-lahsun-hari mirchi - 1 tsp
  • Gram flour / Besan - 1 tbsp
  • Tomato / Tamatar - 1 Finely chopped
  • Salt - As per taste
  • Water - As required
  • Curd / Dahi - 1 Cup
  • Turmeric powder / Haldi powder - 1/2 tsp
  • Red chilli powder / Lal mirch powder - 1 tsp
  • Coriander-cumin seeds powder / Dhaniya-jeera powder - 1 tsp
  • All spice mix powder / Garam masala - 1/2 tsp
  • Coriander leaves / Hara dhaniya - A handful + For garnishing
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Heat 1 tbsp oil in a pan. Add lady finger and shallow-fry it for 3 to 4 minutes on medium flame. Keep stirring it in between. Once done, turn off the flame.
  2. Take curd in a bowl. Add little water, turmeric powder, red chilli powder, coriander-cumin seeds powder, all spice mix powder, and salt. Mix well. Keep it aside.
  3. Heat 2 tbsp of oil in a pan. Add cumin seeds, asafoetida, and onion. Mix well and saute it for a few seconds on high flame.
  4. Then add crushed ginger-garlic-green chilli and mix well. Saute it for 1 to 2 minutes on medium flame. Keep stirring it in between.
  5. Now add gram flour and mix well. Roast it for 1 to 2 minutes on medium flame. Keep stirring continuously.
  6. Further, add tomato and mix well. Then add salt and a little water. Mix well and cover the pan with a lid. Cook it for 1 to 2 minutes on medium flame. Keep stirring occasionally in between.
  7. Add the prepared curd mixture and mix well. Keep stirring continuously till it starts to boil otherwise, curd will curdle.
  8. Add coriander leaves and shallow fried lady fingers. Mix well.
  9. Once done, garnish it with coriander leaves. Take it out to a serving bowl.
  10. 'Dhaba Style Bhindi Masala | Besan Wali Bhindi' is ready to be served.
