Dhaba Style Dal Tadka is one of the most popular dishes served in Indian restaurants.

Dhaba Style Dal Tadka is a popular Indian lentil dish prepared from arhar dal (husked & split pigeon pea lentils). Basically, dal tadka is cooked lentils that are tempered with ghee fried spices. Frying the spices releases their essential oils, aroma, and flavor in the hot ghee. This fried spices, ghee mixture is added to prepared lentils, and it greatly changes the flavor, aroma, and taste of the dish. The tempering adds a lot of flavors, and thus the dal tadka gets paired beautifully with steamed rice or jeera rice.   • The consistency of the dal is neither thick nor thin but medium.
  • You can also soak the lentils for 30 to 40 minutes before cooking them, which helps in cooking the lentils faster.
  • Tempering with ghee will enhance the flavor of dal.
  • Adjust the spices and serve it hot for the better taste.
  • You can also use more than one dal to prepare a dal tadka.
  • The ingredients like onion, garlic, ginger, and tomatoes are finely chopped or roughly or coarsely crushed.

Ingredients

  • Ghee/ clarified butter - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Hing/ asafoetida - a pinch
  • Onion - 1 small-sized finely chopped
  • Garlic - 3 to 4 cloves finely chopped
  • Ginger - a small piece finely chopped
  • Green chili - 1 finely chopped
  • Tomato - 1 big-sized finely chopped
  • Salt - as required
  • Toor dal/ arhar dal/split pigeon peas lentil - 1 cup
  • Water - as required
  • Turmeric powder - a pinch
  • Red chili powder - 1/2 teaspoon for dal and 1 teaspoon for tadka
  • Coriander and cumin powder - 1/2 teaspoon
  • Garam masala/ all mix spices - 1/2 teaspoon
  • Coriander leaves - a fistful finely chopped
  • Kasuri methi/ dry fenugreek leaves - as required
  • Lemon juice - 1/2 lemon
  • Dry red chili - 1

Instructions

  1. Take a bowl of toor dal and wash it properly. Soak it for half an hour.
  2. Now, add salt and turmeric powder and boil it in the pressure cooker for 4 whistles. Turn off the flame and keep it aside.
  3. Heat ghee in a pan and add cumin seeds, hing, and allow it to splutter.
  4. Now, add onion, garlic, ginger, green chili, and saute it on low to medium flame.
  5. Add tomato, salt, and saute it. Cover and cook it for a few seconds.
  6. Add some water, turmeric powder, red chili powder, coriander - cumin powder, garam masala, and saute it well.
  7. Now, pour dal in it and add coriander leaves. Saute it on high flame.
  8. Add salt, kasuri methi, squeeze a lemon, and saute it.
  9. Meanwhile, heat ghee in another pan, and add cumin seeds, dry red chili, coriander leaves, and red chili powder. Mix it and turn off the flame.
  10. Transfer the above tadka over dal and mix it well.
  11. Turn off the flame and garnish it with the coriander leaves.
  12. Delicious Dhaba Style Dal Tadka is ready to be served.
