Dhaba Style Tawa Baingan Masala | Tawa Masala Baingan is a mouthwatering and innovative curry. The brinjal is cooked on tawa. Everyone will love this new sabji of brinjal. You just require brinjal and basic ingredients like onion, tomato, and spices. Moreover, this is quick and easy to prepare without any hassle. It goes well with roti or paratha or naan. In addition, this sabji has an amazing taste that no one will refuse to eat. You can serve this curry for family get-togethers or in the lunch box. Ingredients

  • Oil - As required
  • Brinjal / Baingan - 4 to 5 Sliced
  • Salt - As per taste
  • Asafoetida / Hing - A pinch
  • Cumin Seeds / Jeera - 1/2 tsp
  • Ginger / Adrak - 1 Inch grated
  • Garlic / Lahsun - 3 to 4 Cloves
  • Onion / Pyaz - 1 Finely chopped
  • Coriander Powder / Dhaniya Powder - 1 tsp
  • Red Chilli Powder / Lal Mirch Powder - 1 tsp
  • Turmeric Powder / Haldi Powder - 1/2 tsp
  • All Spice Mix Powder / Garam Masala - 1/2 tsp
  • Pav Bhaji Masala - 1 tsp
  • Tomato / Tamatar - 2 Finely chopped
  • Water - As required
  • Green Chilli / Hari Mirchi - 2 to 3
  • Coriander Leaves / Hara Dhaniya - A handful + For garnishing
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Heat 4 to 5 tbsp of oil on a tawa. Add brinjal and salt. Mix well. Cover the tawa with a lid and cook it for 3 to 4 minutes on medium flame till the brinjal becomes soft. Keep stirring occasionally.
  2. Once cooked well, turn off the flame and keep it aside.
  3. Heat 2 to 3 tbsp of oil on the tawa. Add asafoetida, cumin seeds, ginger, garlic, and onion. Mix well. Saute it for 1 to 2 minutes on high flame. Keep stirring occasionally.
  4. Now add coriander powder, red chilli powder, turmeric powder, all spice mix powder, pav bhaji masala, salt, and tomato. Mix well.
  5. Saute it for 1 to 2 minutes on high flame. Keep stirring occasionally. Add coriander leaves and mash it for a few seconds using a hand masher.
  6. Now add green chilli and a little water and mix well. Saute it for 1 to 2 minutes on high flame. Keep stirring occasionally. Now add the cooked brinjal and mix well.
  7. Once done, turn off the flame and garnish it with coriander leaves.
  8. 'Dhaba Style Tawa Baingan Masala | Tawa Masala Baingan' is ready to be served.
