Tips and suggestions by the Mom Chef:
- The tomato puree should be used in limited quantities to get a nice dhaba style sabji color.
- You can add red chilli powder to the gravy.
- If you want to soak cashews instantly, boil the cashews in the water for 10 minutes on medium flame.
- Only cashews or melon seeds can be used.
- Any type of healthy seeds (eg. pumpkin seeds, almonds, etc.) can be used.
- If you want to make restaurant style sabji then grind the cooked gravy by removing the whole spices.
- You can add water to adjust the consistency of the sabji.
- You can add jaggery or mishri powder instead of powdered sugar.
- Add kofta to the gravy just before serving it.
- FOR KOFTA :
- You can use readymade crumbled paneer instead of chena.
- Finely chopped green chilli and ginger should be added to get a nice dhaba style taste.
- You can add any type of flour instead of oats flour.
- Finely chopped coriander stems should be added to get a strong flavor.
- You can deep fry the kofta.
- Add the flour well to bind the kofta mixture, if you want to deep fry the kofta.
