Dhaniya Powder | Homemade Dhaniya Powder is a flavourful masala. 

Dhaniya Powder | Homemade Dhaniya Powder is an aromatic spice mixture. This uses coriander seeds, cumin seeds, cinnamon, cloves, bay leaf, fennel seeds, black pepper. This enhances the flavour of sabzi and curries. You can use this powder/masala on a daily basis. This will not only enhance the taste of food but it is healthy as well. Moreover, this is super easy to prepare and store. You can make it once and can store this powder for a year. So, try to make it at home and let us know your feedback.

This masala was prepared by Shraddha Thakrar – a lovely GrandMom from Gujarat.

Tips and Suggestions by Mom Chef:-

  • The ingredients should not be over roasted; they need to be just warmed so that their moisture evaporates.
  • The roasted ingredients should be ground only after they cool completely.
  • The masala should be ground on the “pulse” mode. It means that the masala should be ground for just a few seconds at a time. Else, it will leave the moisture.
  • It can be made for a month or for a year. If this masala needs to be stored for a year, then cloves/laung should be added to the masala before it is stored in an air-tight container.

Ingredients

  • Coriander/Dhaniya Seeds - 250 g
  • Cumin Seeds/Jeera - 100 g
  • Fennel Seeds/Saunf - 2 to 3 Tablespoon
  • Cloves/Laung - 7 to 8
  • Black Peppercorns/Kali Mirch - 8 to 10
  • Bay Leaf/Tej Patta - 2
  • Cinnamon/Dal Chini - 1 stick
  • Turmeric powder/Haldi - 1/2 Teaspoon

Instructions

  1. Dry roast the coriander seeds on a low flame for 2 to 3 minutes. Then turn off the flame.
  2. Meanwhile, dry roast cumin seeds, cloves, black peppercorns, cinnamon stick, bay leaf, and fennel seeds. Roast them on a low flame for 2 to 3 minutes. Mix with roasted coriander seeds. Let them cool completely.
  3. Now, take a grinder jar and add roasted ingredients and 1/2 teaspoon turmeric powder. Grind the ingredients in the "pulse"mode to a fine powder. Grind to make fine powder. Then let it cool completely. Store the powder in an airtight container.
  4. 'Dhaniya Powder | Homemade Dhaniya Powder' is ready to use.
