Doodh Dalia is savory broken wheat loaded with milk and dry nuts.

Doodh Dalia is a traditional Indian recipe prepared with broken wheat (Dalia), cooked in a pressure cooker along with a choice of nuts. It is a quick and effortless dish rich with protein. The grains and the nuts together make doodh dalia a wholesome one-pot meal. Dalia is whole wheat grains that are pounded or broken down. It includes the husk, which is a viable source of both nutrition and fiber. The fact that Dalia is as close to the natural form of the grain as possible makes it a much healthier option than other types of wheat by-products. Ingredients

  • Ghee - 1 tablespoon
  • Broken wheat/dalia - 1 bowl
  • Water - 3 bowls
  • Dry coconut - julienne 2 tablespoon
  • Raisin - 1 tablespoon
  • Milk - 3 bowls
  • Sugar - 1/2 bowl
  • Saffron - 6 to 7 threads
  • Cardamom powder - 1/4 teaspoon
  • Pistachio - 4 to 5 julienne

Instructions

  1. Heat ghee in the pressure cooker.
  2. Add dalia and roast it, until it's color changes to pink.
  3. Add water to it, with the ratio 1:3 dalia : water.
  4. Add dry coconut pieces and raisin to it.
  5. Cover the pressure cooker and take 3 whistles.
  6. Now, open the pressure cooker and add milk to it, with the ratio 1:1 water : milk.
  7. Keep the flame high till the milk boils.
  8. Add sugar and soaked saffron. Soak saffron into the milk.
  9. Add cardamom powder to it. Mix it well.
  10. Garnish it with pistachio.
  11. Delicious Doodh Dalia is ready to be served.
