Dum Aloo is a popular and flavorful potato curry.

Dum Aloo is a delicious recipe where the potatoes are cooked in a gravy. Potatoes are parboiled and then shallow fried. Later these potatoes are added in the gravy and simmered. Overall it is a time savior curry for the busy days or you have a sudden guest for lunch or dinner. Try to prepare this delicious curry and enjoy it with family and friends. Tips and Suggestions by Chef:-
  • Always use full-fat curd and as soon as you add the curd, mix it quickly.
  • When you are mixing the curd, lower the flame, or switch off the flame.
  • Do not overboil the potato as we have to further cook it in the curry.
  • If you do not have baby potato then cut the big-sized potato into 2 or 4 equal parts.
  • The flavors are enhanced when dum aloo is cooked on low flame.
  • You can use any red chili powder, but for a nice red color use Kashmiri red chili powder.
  • Adjust the spice as per the requirement.
  • Serve it hot for the better taste.

Ingredients

  • Oil - 2 tablespoons
  • Potato - 4 to 5
  • Onion - 2 chopped
  • Garlic - 3 cloves
  • Ginger - 1 small piece
  • Green chili - 2 slits and deseed
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Tomato puree - 2 small-sized
  • Turmeric powder - 1/2 teaspoon
  • Kashmiri red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - as required
  • Curd - 1/2 small bowl
  • Kasuri methi/ dry fenugreek leaves - 1/2 teaspoon
  • Garam masala - all spice mix - 1 teaspoon
  • Water - 3/4 glass or as required for gravy
  • Coriander leaves - finely chopped as required for garnishing

Instructions

  1. Take a pressure cooker and add potato, water, and salt. Allow it to boil up to 1 whistle and turn off the flame.
  2. Now, drain the water and peel the potato. If the potatoes are big in size then you can cut it into 2 pieces.
  3. Heat oil in a pan and place the potatoes in it. Keep the flame low to medium and stir it occasionally.
  4. Meanwhile, add onion, garlic, ginger, and green chili in the mixer jar and grind it.
  5. Heat oil in another pan and add cumin seeds, mustard seeds, and above ground paste. Saute it well.
  6. In between stir potato occasionally.
  7. Now, add tomato puree and saute it well on low to medium flame. Allow it to cook until it leaves oil.
  8. Add turmeric powder, red chili powder, coriander powder, salt, and saute it.
  9. Further, add curd and saute it.
  10. Crush kasuri methi between palms before adding it. Add garam masala and saute it well.
  11. Add potato and water. Saute well and cover it. Cook it for 5 to 7 minutes on low to medium flame.
  12. Garnish it with the coriander leaves and turn off the flame.
  13. Delicious Dum Aloo is ready to be served.
