Gajar Ki Chutney | Carrot Chutney is a delicious and healthy chutney for everyone.

Gajar Ki Chutney | Carrot Chutney is a mouthwatering dip. This uses carrot and peanuts hence it is a very nutritious and flavourful chutney. This goes well with any type of paratha or even meals. Everyone will love this chutney ad demand you for more. This has slight sweetness because of carrot. Moreover, this is a quick ad easy to prepare using fewer ingredients. So, try to make this winter delicacy and enjoy this season with your family ad friends. Do share your feedback as well.

Tips and Suggestions by Mom Chef:-

  • If you can add whole red chillies or green chillies instead of red chilli powder.
  • You can use coconut instead of roasted peanuts.

Ingredients

  • Gajar/ Carrot - 1 Cup grated
  • Chana Dal/ Bengal Gram - 1/2 Teaspoon
  • Urad dal/ Black gram without skin - 1/2 Teaspoon
  • Rai/ Mustard seeds - 1/4 Teaspoon
  • Jeera/ Cumin seeds - 1/2 Teaspoon
  • Hing/ Asafoetida - a pinch
  • Grated Adrak/ Ginger - 1/2 Teaspoon
  • Laal Mirch powder/ Red Chilli powder - 1/2 Teaspoon or as per taste
  • Roasted Moongfali/ Peanuts - 2 to 3 Tablespoon
  • Namak/ Salt - as per taste
  • Tel/ Oil - 1 to 2 Tablespoon
  • Jeera powder/ Cumin powder - 1/2 Teaspoon
  • Chaat Masala - as per taste
  • Nimbu Ras/ Lemon juice - juice of 1/2 lemon
  • INGREDIENTS FOR TADKA:-
  • Tel/ Oil - 1 Teaspoon
  • Sarso/ Mustard seeds - 1/2 Teaspoon
  • Hing/ Asafoetida - a pinch

Instructions

  1. Heat oil in a pan.
  2. Add chana dal/ Bengal gram, urad dal/ Black gram without skin, mustard seeds, cumin seeds, asafoetida, and grated ginger. Sauté for a few seconds on a medium flame.
  3. Add carrot, mix well, and sauté for 1 minute.
  4. Add red chilli powder, mix well, and cook.
  5. Add roasted peanuts and mix well. Cook for a minute then turn off the flame. Let the mix cool completely.
  6. Now, grind cooked carrot mixture, cumin powder, chaat masala, lemon juice, salt, and a little water in a grinder jar to a smooth paste. Add more water if required. Transfer the chutney to a bowl.
  7. PREPARING THE TADKA:
  8. Heat 1 teaspoon oil in tadka pan.
  9. Add mustard seeds and asafoetida. Let the seeds crackle. Pour this tadka on the chutney.
  10. Delicious 'Gajar Ki Chutney | Carrot Chutney' is ready to be served.
