Gajar Ki Chutney | Carrot Pachadi is a colorful side dish.

Gajar Ki Chutney | Carrot Pachadi is a healthy and spicy dish. It is easy to prepare in just a few minutes. You just have to add ground carrot, coconut, and coriander leaves with some spices in a bowl and add tadka to prepare chutney.  In addition, this nutritious chutney is great for digestion. It goes well with hot rice and ghee. Moreover, it is a multipurpose chutney that can be used in many different ways. Tips and suggestions by the Mom Chef:

  • Grind coconut, carrot, and coriander leaves separately for colorful chutney.
  • If desired, grind coconut, carrot, and coriander leaves together.
  • If you want you can use grated coconut and carrot.
  • Add 1 tsp of water so the chutney will not become dry.
  • Adding tadka to the chutney is optional.
  • Urad dal and chana dal are optional for tadka.

Ingredients

  • Coconut / Nariyal - 1 Cup chopped
  • Orange carrot / Gajar - 1 Cup chopped
  • Coriander leaves / Hara dhaniya - A handful
  • Ginger / Adarak - 1/2 Inch chopped
  • Green chilli / Hari mirchi - 2 to 3 chopped
  • Salt - As per taste
  • Water - 1 tsp
  • Oil - 1 tbsp
  • Mustard seeds / Rai - 1/2 tsp
  • Cumin seeds / Jeera - 1/2 tsp
  • Asafoetida / Hing - A pinch
  • Black gram / Urad dal - 1/4 tsp
  • Bengal gram / Chana dal - 1/4 tsp
  • Lemon juice / Nimbu ka ras - Of 1/2 lemon
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Take coconut in a grinding jar. Coarsely grind it for a few seconds. Keep it aside.
  2. Take carrot in a grinding jar. Coarsely grind it for a few seconds. Keep it aside.
  3. Take coriander leaves, ginger, green chilli, and salt in a grinding jar. Coarsely grind it for a few seconds. Keep it aside.
  4. Now take ground coconut, carrot, and coriander mixture in a bowl. Add 1 tsp of water and mix well.
  5. Heat oil in a tadka pan. Add mustard seeds, cumin seeds, asafoetida, black gram, bengal gram. Mix well and saute it for 1 to 2 minutes till the black gram and bengal gram becomes nice golden brown.
  6. Pour the tadka into the prepared chutney and mix well. Add lemon juice. Mix well.
  7. 'Gajar Ki Chutney | Carrot Pachadi' is ready to be served with hot rice.
