Gajar Matar Sabzi is a seasonal and nourishing sabzi. 

Gajar Matar Sabzi is a seasonal delight and is nutritious as well. This uses carrot/gajar, peas/matar, and some of the spices. The good thing is it does not use onion and garlic so everyone will enjoy this sabzi. Moreover, this is quick and super easy to prepare. This goes well with roti and paratha. You can serve this sabzi for lunch in the tiffin or dinner. This has many health benefits. So, try to make this sabzi at home and enjoy this winter delicacy. Do share your feedback with us.

Ingredients

  • Gajar/Carrot - 1 bowl finely chopped
  • Green Peas - 1 bowl
  • Ginger - 1/2 inch piece grated
  • Green Chilli - 1 finely chopped
  • Asafoetida/Hing - a pinch
  • Cumin seeds/Jeera - 1/2 Teaspoon
  • Salt - as per taste
  • Turmeric powder - 1/2 Teaspoon
  • Coriander powder - 1 Teaspoon
  • Roasted Cumin powder - 1/2 Teaspoon
  • Red Chilli powder - 1/2 Teaspoon or as per taste
  • Amchur/Dry Mango Powder - 1/2 Teaspoon
  • Kasuri Methi/Dry Fenugreek Leaves - 1/2 Teaspoon
  • Coriander Leaves - as required
  • Mustard Oil - 1 Tablespoon

Instructions

  1. Boil green peas in a pan. Add little salt and boil. Once the green peas are soft turn off the flame. Drain the water completely.
  2. Meanwhile, heat mustard oil in a pan.
  3. Add asafoetida, cumin seeds, grated ginger, green chilli. Saute for a few seconds.
  4. Add finely chopped carrot and mix well. Cover and cook for 3 to 4 minutes. Stir it in between.
  5. Once the carrot is soft, add boiled green peas. Mix well.
  6. Add salt, turmeric powder, coriander powder, red chilli powder, and roasted cumin powder. Mix well.
  7. Add dry mango powder, coriander leaves, and kasuri methi. Mix well. Cook for a minute and then switch off the flame.
  8. Delicious 'Gajar Matar Sabzi' is ready to be served.
