Ghugni Chaat – Kolkata Famous Chaat is a delicious snack item Famous across Bengal and Neighbour states in India.

Kolkata is famous for its Street Food and one of the famous street food is Ghugni Chaat. The dried peas are boiled and cooked with spices and potato to make this yummy chaat. This snack item is extremely delicious and healthy too. This spicy chaat is a favourite of almost all people. This dish has its variation and known as Ragda in Mumbai and Gujarat, Matar Chole in Punjab and Matar Ki Chaat in Northern Part of India. This can be a one-pot meal or an evening snack for all. It is a lip-smacking and nutritious snack item. So, try to make this at home and enjoy with your loved ones.

This recipe was prepared under Live Cooking Contest ‘Zayka Premier League’ by a lovely mom from Kolkata – Shalini Dokania.

Tips and Suggestions by Mom Chef:-

  • You can adjust the spices as per your taste.
  • Also, you can add tomato puree instead of chopped tomato.
  • Adjust the consistency of chaat as per your liking. You can add more or less water to adjust the consistency.

Ingredients

  • Matar/Dried peas - 1 Cup
  • Potato - 1 medium sized boiled
  • Onion - 1 medium sized finely chopped
  • Ginger Garlic paste - paste 4 cloves garlic and 2 inch ginger
  • Tomato - 1 chopped
  • Green chilli - 1 sliced + 2 chopped
  • Coriander leaves - 2 Tablespoon chopped
  • Tej Patta/Bay Leaf -1
  • Green Cardamom /Elaichi - 2
  • Laung/Cloves - 2
  • Dry Red Chilli - 2
  • Cumin seeds - 1/2 Teaspoon
  • Turmeric powder - 1 Teaspoon
  • Garam Masala/All spice mix - 1 Teaspoon
  • Cumin Powder - 1 Teaspoon
  • Salt - as per taste
  • Water - 1 Cup or more
  • Ghee/Clarified Butter - 1 Teaspoon
  • Mustard oil - 2 Teaspoon

Instructions

  1. Soak the dried peas overnight. Then Boil it or you can pressure cook it. Also, boil the potato.
  2. Now, take a kadai or pan. Add ghee/clarified butter and mustard oil. Heat it.
  3. Add bay leaf, green cardamom, cloves, dry red chilli and cumin seeds. Saute it.
  4. Add finely chopped onion and saute it until translucent. Then add ginger garlic paste and saute.
  5. Add chopped tomato and cook it for 1 to 2 minutes.
  6. Take a small bowl and add turmeric powder, cumin powder, garam masala, salt as per taste. Add little water to make paste. Add this paste to the kadai. Mix and cook.
  7. Then add chopped boiled potato. Mix and cook for 2 to 3 minutes on a medium flame.
  8. Add 1 slit green chilli then boiled dried peas. Mix and add 1 cup of water. Cover and cook it 4 to 5 minutes on a medium flame.
  9. Add chopped green chillies and coriander leaves. Mix well and cook for a minute.
  10. Add more coriander leaves and then switch off the gas.
  11. Delicious 'Ghugni Chaat' is ready to be served.
