Gongura Rice | Andhra Gongura Puliyogare is a popular dish in south India.

Gongura Rice | Andhra Gongura Puliyogare is a spicy and sour one-pot meal. This is easy to make and tasty as well as healthy. Generally, it is served by itself without any side dish but also tastes great with plain raita and sambhar. Gongura leaves are rich in minerals and easy to digest. It avoids fat absorption so it helps in weight management. In addition, you can prepare it for any type of party or get-together menu.  So, try to make this traditional dish in your kitchen and share your feedback with us.

Ingredients

  • FOR PREPARING GONGURA PASTE :
  • Oil - 2 tbsp
  • Mustard seeds / Rai - 2 tsp
  • Fenugreek seeds / Methi dana - 1 tsp
  • Dry red chilli / Sukhi lal mirchi - 14 to 15
  • Garlic / Lahsun - 4 to 5 Cloves
  • Roselle leaves / Gongura leaves - 2 Cups
  • Coriander leaves / Hara dhaniya - A handful (optional)
  • FOR PREPARING GONGURA RICE :
  • Oil - 1 tbsp
  • Mustard seeds / Rai - 1/2 tsp
  • Cumin seeds / Jeera - 1/2 tsp
  • Black gram / Urad dal - 1 tsp
  • Bengal Gram / Chana dal - 1 tsp
  • Garlic / Lahsun - 8 to 10 Cloves
  • Green chilli / Hari mirch - 3 to 4 Slited
  • Onion / pyaz - 2 Sliced
  • Curry leaves / Curry patta - A few
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1 tsp
  • Cooked Rice / Chawal - 2 Cups
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR PREPARING GONGURA PASTE :
  2. Heat oil in a pan. Add mustard seeds and fenugreek seeds. Roast fenugreek seeds for a few seconds on medium flame until it becomes golden brown.
  3. Then add dry red chillies and garlic. Saute it for a few seconds on medium flame.
  4. Now add gongura leaves and coriander leaves. Mix well. Saute it for 2 to 3 minutes on medium flame. Keep stirring continuously.
  5. Once done, keep it aside and let it cool down. Then transfer it to a grinding jar and grind it for a few seconds to prepare it's paste.
  6. FOR PREPARING GONGURA RICE :
  7. Heat oil in a pan. Add mustard seeds, cumin seeds, black gram, bengal gram, garlic, green chilli, onion, curry leaves, and salt. Mix well and saute it for 1 to 2 minutes on medium flame.
  8. Now add turmeric powder and mix well. Saute it on medium flame until the onion becomes golden brown.
  9. Then add the ground gongura paste. Mix well. Finally, add cooked rice. Mix well and take it out to a serving plate.
  10. 'Gongura Rice | Andhra Gongura Puliyogare' is ready to be served.
