Haldi Ki Sabji | Kachchi Haldi Matar Ki Sabji is a healthy winter special dish.

Haldi Ki Sabji | Kachchi Haldi Matar Ki Sabji is spicy and rich in taste. You just need clarified butter, raw turmeric, onion, tomato, garlic, green peas, and some spice to prepare this special side dish. It tastes great with roti or paratha. In addition, you can serve it on behalf of the pickle. Moreover, raw turmeric has many health benefits like it improves heart health and prevents Alzheimer’s and cancer. It’s a potent anti-inflammatory and antioxidant. It also helps improve symptoms of depression and arthritis. Tips and Suggestions by Mom Chef:

  • You can store this sabji in a refrigerator for 15 days.
  • The raw turmeric should be grated just before making sabji, otherwise, it will turn black.
  • Prepare this sabji in ghee for a better taste.
  • You can saute raw turmeric in advance, to save time.
  • When the raw turmeric becomes soft and the ghee separates, it indicates that raw turmeric is well cooked.
  • You can add spices as per taste.
  • The curd should be at room temperature.
  • Keep the flame low before adding curd, otherwise, it will curdle.
  • You can cook the green peas with onion and tomato.
  • Onion and garlic are optional.
  • You can add cashews and raisin also to the sabji.
  • FOR SAUTEED RAW TURMERIC :
  • The ratio of ghee to raw turmeric should be 1:1.

Ingredients

  • FOR SAUTEED RAW TURMERIC :
  • Raw Turmeric / Kachchi Haldi - 250 gms
  • Clarified Butter / Ghee - 250 gms
  • FOR PREPARING HALDI KI SABJI :
  • Clarified Butter / Ghee - 2 tbsp
  • Mustard Seeds / Rai - 1/2 tsp
  • Asafoetida / Hing - A pinch
  • Green Chilli / Hari Mirchi - 2
  • Onion / Pyaz - 2 Finely chopped
  • Garlic / Lahsun - 5 to 7 Cloves crushed
  • Tomato / Tamatar - 1 Finely chopped
  • Salt - As per taste
  • Red Chilli Powder / Lal Mirch Powder - 1 tsp
  • Coriander Powder / Dhania Powder - 2 tsp
  • All Spice Mix Powder / Garam Masala - 1/2 tsp
  • Dry Fenugreek Leaves / Kasuri Methi - 1 tsp
  • Curd / Dahi - 1 Cup whisked
  • Parboiled Green Peas / Hare Matar - 1 Cup
  • Coriander Leaves / Hara Dhaniya - A handful + For garnishing
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR SAUTEED RAW TURMERIC :
  2. Wash and peel the raw turmeric. Then grate it. The raw turmeric should be grated just before making sabji, otherwise, it will turn black.
  3. Heat ghee in a pan. Add raw turmeric. Mix well. Saute it for 5 to 7 minutes on low flame till it becomes soft and the ghee separates. Then turn off the flame and keep it aside.
  4. FOR PREPARING HALDI KI SABJI :
  5. Heat ghee in a pan. Add mustard seeds, asafoetida, green chilli, garlic, and onion. Mix well and saute it for 2 to 3 minutes on high flame.
  6. Further, add tomato. Mix well. Saute it for 2 to 3 minutes on a medium flame.
  7. Then add green peas and mix well. Now add sauteed raw turmeric. Mix well.
  8. Add salt, red chilli powder, coriander powder, all spice mix powder, and dry fenugreek leaves by rubbing between your palms. Mix well.
  9. Then keep the flame low and add coriander leaves and curd. Mix well and stir it continuously for 1 to 2 minutes till it starts to boil.
  10. Garnish it with coriander leaves. Take it out to a serving bowl.
  11. 'Haldi Ki Sabji | Kachchi Haldi Matar Ki Sabji' is ready to be served.
