Hara Bhara Thepla is a famous Gujarati dish. 

Hara Bhara Thepla is a healthy flavourful recipe from fresh fenugreek leaves. You can serve it as breakfast and lunch with plain yogurt and mango pickle. Thepla recipe comes very handy as a lunch box recipe and also for tiffin boxes while traveling. It has a longer shelf life compared to normal roti and can be easily preserved for 2 to 3 days easily. it is full of antioxidants and fiber, which eventually remove all toxins from our bodies. Tips and suggestions by the Mom Chef:

  • The fenugreek leaves should be added in enough quantity.
  • You can add dry fenugreek leaves(Kasuri methi) instead of fresh fenugreek leaves.
  • If needed add 1 Tablespoon of curd to knead the dough.
  • Don’t use water to knead the dough.
  • You can store the dough in the refrigerator for 2 to 3 days.

Ingredients

  • FOR PREPARING GREEN PASTE :
  • Fenugreek leaves / Methi - 1/4 Cup
  • Spinach / Palak - 1/4 Cup
  • Coriander leaves / Hara dhaniya - 1/4 Cup
  • Curry leaves / Curry patta - A few
  • Mint leaves / Pudina - A handful
  • Capsicum - 3 to 4 Pieces
  • Green chilli / Hari mirchi - 1
  • Ginger / Adrakh - 1 Inch chopped
  • Garlic / Lahsun - 7 to 8 Cloves (optional)
  • Sesame seeds / Til - 1 Teaspoon
  • Water - 1 Tablespoon
  • FOR PREPARING HARA BHARA THEPLA :
  • Whole wheat flour / Gehu atta - 1 cup
  • Gram flour / Besan - 2 Tablespoons
  • Salt - As per taste
  • Asafoetida / Hing - A pinch
  • Sesame seeds / Til - 1/2 Teaspoon
  • Oil - 2 Teaspoons + For roasting
  • Fenugreek leaves / Methi - 1 Cup chopped
  • Spinach / Palak - 1/2 Cup chopped
  • Coriander leaves / Hara dhaniya - 1 Cup chopped

Instructions

  1. FOR PREPARING GREEN PASTE :
  2. Take fenugreek leaves, spinach, coriander leaves, curry leaves, mint leaves, capsicum, green chilli, ginger, garlic, sesame seeds, and water in a grinding jar. Grind it for a few seconds. Keep it aside.
  3. FOR PREPARING HARA BHARA THEPLA :
  4. Take whole wheat flour in a bowl. Add gram flour, salt, asafoetida, sesame seeds, 2 Teaspoons of oil, fenugreek leaves, spinach, and coriander leaves. Mix well.
  5. Now add the ground green paste and knead a dough of medium consistency. Let it rest for 10 minutes.
  6. Take the small ball sized dough and make round shaped circular peda from the dough. Dust it with flour and roll a peda to make a thepla.
  7. Meanwhile, heat a tawa. Place the thepla on the tawa. Cook from one side on low flame.
  8. Flip it once it is slightly brown. Roast it on medium flame. Apply oil on both sides, and cook it on a medium flame. Press the thepla while cooking it.
  9. Once done. Take it out to the serving plate.
  10. 'Hara Bhara Thepla' is ready to be served.
