Hari Mirch Ka Achar | Stuffed Green Chilli Pickle is a delicious side dish. It is easy to prepare with green chilli and some spices. You can easily prepare it for lunch or dinner. Moreover, you can carry this pickle with paratha while you are traveling. Green chilli with salt, turmeric powder, red chili powder, and amchur gives a tangy and spicy flavor to this achaar.   • This pickle should initially be kept at room temperature for 4 to 5 days and then stored in a glass jar.
  • The quantity of the oil should be such that it floats at the top of the pickle in the glass jar to store the pickle for a long time.

Ingredients

  • Green Chilli / Hari Mirchi - 4 Big sized
  • Crushed Mustard Seeds / Pisi Hui Rai - 1/2 Cup
  • Fennel Seeds / Saunf - 1/4 Cup coarsely ground
  • Dry Mango Powder / Amchur - 1 tbsp
  • Red Chilli Powder / Lal Mirch Powder - 1 tsp
  • Turmeric Powder / Haldi Powder - 1/2 tsp
  • Salt - As per taste
  • Mustard Oil / Sarso Ka Tel - 1 tbsp + As required
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Heat mustard oil in a pan. Then let it cool down completely. Keep it aside.
  2. Wash the chillies and wipe them with a clean dry cloth completely. Make a vertical slit on chilli from top to the bottom and scoop out the seeds. Keep it aside.
  3. Take crushed mustard seeds, fennel seeds, dry mango powder, red chilli powder, turmeric powder, and salt. Mix well. Then add 1 tbsp of mustard oil and mix well.
  4. Now stuff the prepared masala into the green chilli. Likewise, stuff all the chillies. Cut them into 2 pieces.
  5. Now put all the stuffed chillies into the glass plate. Add leftover masala and 5 to 6 tbsp of mustard oil.
  6. The pickle will be ready to consume after 4 to 5 days.
  7. This pickle should initially be kept at room temperature for 4 to 5 days and then stored in a glass jar.
  8. The quantity of the oil should be such that it floats at the top of the pickle in the glass jar to store the pickle for a long time.
