Instant Tamarind Puliogre is popular and delicious tamarind rice from southern India.

Instant Tamarind Puliogre is a sour and spiced rice recipe, mainly prepared in the south Indian state especially in temples. It is offered as prasadam or nivedyam and then served to devotees.  The recipe of Puliyogare varies from region to region and known by different names in different states like Puliyogare / Puliyodharai / Pulihora / Tamarind Rice and at the end taste also varies. Tips and Suggestions by Mom Chef:-

  • You can make a large batch of the mixture and store it in an airtight container, to prepare this rice quickly later as well.
  • Make sure to use fresh coconut and roasted peanuts.
  • Dry roast and grind the sesame seeds to prepare a sesame powder.
  • Do not overcook the rice.
  • Adjust the spiciness, tanginess, and sweetness as per the requirement.
  • Serve it hot for a better taste.

Ingredients

  • Oil - 3 to 4 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Hing/ asafoetida - 1/2 teaspoon
  • Salt - as required
  • Tamarind - 1/2 cup
  • Dry red chili - 10 to 12
  • Coriander seeds - 2 tablespoons
  • Cumin seeds - 1 tablespoon
  • Whole urad dal/ husked black gram - 1 teaspoon
  • Jaggery - 3 to 4 small pieces
  • Fresh coconut - 1/2 cup chopped
  • Roasted peanuts - 1/2 cup
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 8 to 9
  • Boiled rice - 1/2 bowl
  • Sesame powder - 1 tablespoon

Instructions

  1. Using a mixer grinder, grind tamarind, dry red chili, coriander seeds, cumin seeds, urad dal, jaggery, and coconut.
  2. Heat oil in a pan and add turmeric powder, hing, salt, and above ground mixture. Saute it on a low to medium flame until it gets roasted properly.
  3. Meanwhile, heat oil in a pan and add roasted peanut.
  4. Add mustard seeds, turmeric powder, hing, and curry leaves. Then, turn off the flame.
  5. In a bowl, add some rice and salt. Mix it properly.
  6. Add the roasted mixture in the batches and mix it. Now, add sesame powder and mix it.
  7. Then, pour tadka in it and mix it well.
  8. Delicious Instant Tamarind Puliogre is ready to be served.
