Jodhpuri Mirchi Bada | Chilli Fritters is a mouth-watering snack.

Jodhpuri Mirchi Bada | Chilli Fritters is a famous street food of Rajasthan. It requires big less spicy green chillies, spicy potato filling. You can make this dish by stuffing a tangy filling to green chillies, coating them with gram flour, and deep-frying them in oil. This snack is relished all over India and it is also popularly known as Mirchi vada in south India. You can serve it with chutney, sauce or can have it in between bread too. Moreover, this is a perfect tea time snack enjoyed by both young and old. So, try this at home and give your valuable feedback.

Tips and Suggestions by Mom Chef:-

  • You can make this batter by adding a spoon of hot oil to make crispy bada. This avoids adding soda.
  • Bada usually requires more salt and so check the amount of salt while making the batter.
  • Remember that the consistency of the batter should always be medium thick and not runny; else, the dish will absorb more oil.
  • Fry the bada on a medium flame for the perfect texture.

Ingredients

  • Moti mirchi/ Green chilli - 6
  • FOR STUFFING:
  • Tel/ Oil - 1 Tablespoon
  • Jeera/ Cumin seeds - 1 Tablespoon
  • Saunf/ Fennel seeds - 1 Tablespoon
  • Saboot Dhaniya/ Coriander seeds - 1/2 Teaspoon
  • Kaju/ Cashew nuts chopped - 1 Teaspoon
  • Kishmish/ Raisins - 1 Teaspoon
  • Pyaaz/ Onion - 1 small finely chopped
  • Boiled Aloo / Potato - 3 mashed well
  • Laal mirch powder/ Red chilli powder - 1 & 1/2 Teaspoon
  • Dhaniya powder/ Coriander powder - 2 Teaspoon
  • Turmeric powder/ Haldi powder - 1/2 Teaspoon
  • Garam masala/ All spice mix - 1/2 Teaspoon
  • Amchur powder/ Dry mango powder - 1/2 Teaspoon
  • Namak/ Salt - As per taste
  • Dhaniya patta/ Kothmir/ Coriander leaves - A handful chopped
  • FOR BATTER :
  • Besan/ Gram flour - 1 Bowl
  • Laal mirch powder/ Red chilli powder - 1 Teaspoon
  • Haldi powder/ Turmeric powder - 1/2 Teaspoon
  • Namak/ Salt - 2 Teaspoon or as per taste
  • Ajwain/ Carom seeds - 1 Teaspoon crushed well in between your palms.
  • Bhuna Jeera powder/ Roasted Cumin powder - 1/2 Teaspoon
  • Water - As per requirement.
  • Hot Oil/ Tel - 1 Teaspoon
  • Hing/ Asafoetida - A pinch
  • Oil - For frying

Instructions

  1. PREPERATION OF STUFFING :
  2. Firstly, heat oil in a pan and add cumin seeds, fennel seeds, coriander seeds, cashews, and raisins. Sauté it on a low flame for a few seconds.
  3. Then add onions and sauté it on a medium flame. When the raw smell of onion disappears, add mashed potatoes and mix well.
  4. Then add red chilli powder, coriander powder, turmeric, allspice mix/garam masala, dry mango powder, and salt. Mix them well.
  5. Then add coriander leaves and turn off the flame. Allow the mixture to cool.
  6. PREPERATION OF BATTER:
  7. Take a bowl and add gram flour, red chilli powder, turmeric, salt, carom seeds, and roasted cumin powder and mix well.
  8. Add a little water at a time and make a medium-thick batter. Add hot oil and mix well . Lastly, add asafoetida. Combine everything well and keep the batter aside.
  9. PREPERATION OF BADA:
  10. Wash and dry the green chillies. Take each chilli and slit it in such a way as to keep it joined at the other end. Remove all the seeds. Likewise, slit all the other chillies.
  11. Fill all the chillies with the stuffing.
  12. Dip the chillies in the prepared batter. Make sure it is coated well from all the sides. Then immediately fry it in hot oil.
  13. Fry the badas till golden brown on all sides. Once done, take them out on a tissue paper to soak extra oil.
  14. 'Jodhpuri Mirchi Bada' is ready to serve. You can cut it into halves and serve it with any chutney.
