Kadambam | Sambar Rice is a popular and traditional South Indian dish.

Kadambam | Sambar Rice is one of the simple, healthy, and easy to prepare from mixed vegetables, lentils, rice, and sambar powder. It is a no onion and no garlic dish. Due to the addition of lentils and mixed vegetables, it is rich in protein and nutrition. The juicy or liquidy consistency flavorful rice with veggies makes you eat more and more.   • You can also prepare this rice by using only tuvar dal.
  • Add veggies of your choice.
  • If the rice is too thick then you can add hot water to make it watery.
  • Instead of moggu, you can add clove.
  • Adjust the spiciness, tanginess, and sweetness as per the requirement.

Ingredients

  • Rice - 1 cup
  • Tuvar dal/ pigeon pea - 1/4 cup
  • Moong dal/ yellow lentils - 1/4 cup
  • Water - as required
  • Oil - 1 to 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Hing/ asafoetida - a pinch
  • Turmeric powder - a pinch for tadka and a pinch for rice
  • Dry red chili - as required, chopped
  • Curry leaves - as required
  • Moggu/ kapok buds - 3 to 4
  • Nature herbs chadeela/ patthar ke phool - as required (optional)
  • Drumstick - 1 big-sized, chopped
  • Pumpkin/ kaddu - 1 cup, chopped
  • Carrot - 1 cup, chopped
  • Beans - 1/2 cup, chopped
  • Radish - as required
  • Salt - as required
  • Tamarind juice - 1 cup
  • Jaggery - 1/2 inch or as required
  • Sambar powder - 4 teaspoons or as required
  • Tomato - 1/2 cup, chopped (optional)
  • Ghee/ clarified butter - 1 tablespoon
  • Cashew - as required (optional)

Instructions

  1. Soak tamarind in enough water and squeeze the tamarind. Keep the juice aside.
  2. Wash rice, tuvar dal, and moong dal together. Transfer them to the pressure cooker and add turmeric powder, and pour 4 to 4(1/2) cup of water. Take 5 whistles to prepare the soft consistency rice.
  3. Heat oil in a pan and add mustard seeds, hing, turmeric powder, 3 to 4 dry red chili, curry leaves, moggu, patthar ke phool, drumstick, pumpkin, carrot, beans, and radish. Saute well on a low flame.
  4. Add salt and mix well. Cook for a minute.
  5. Pour water and mix well on a medium flame. Boil for 4 to 5 minutes until cooked. Do not overcook the veggies.
  6. Add tamarind juice, jaggery, and sambar powder. Mix well and allow it to boil.
  7. Add tomato and mix well. Allow it to boil.
  8. Now, add cooked rice little by little and mix continuously to prevent it from lumps. It should be of watery consistency. Cook for a minute.
  9. Heat ghee in a saucepan and add cashew, dry red chili, and curry leaves.
  10. Now, pour this tadka into the rice.
  11. Delicious Kadambam | Sambar Rice is ready to be served.
