Kair Saangri Pyaaz Ki Sabji | Rajasthani Style is a famous and delicious dish. This recipe mainly uses dried kair berries and saangri. The saangri beans grow on a tree called Khejri and freshly plucked directly from the trees and soaked and kept to dry for some time. It is then used to make this famous Rajasthani recipe. This is a delicious and flavourful recipe that does not require much time for cooking this dish. So try this famous Rajasthani delicacy at your home and tell us how you like it. Tips and Suggestions by the Chef:-

  • Boil the saangri for 5 to 7 minutes and let it dry.
  • Soak the dried saangri 15 minutes before you wish to prepare the sabji and then let it dry.
  • Before cooking the kair berries, soak them in buttermilk.

Ingredients

  • Saangri - Around 200 grams
  • Kair - 1/4 cup
  • Oil - 3 Teaspoon
  • Cumin Seeds/ Jeera - 2 Teaspoon
  • Onion/ Pyaaz - 1 cup sliced
  • Garlic/ Lehsun - 1/4 cup finely chopped
  • Red Chili/ Laal Mirch Powder - as per taste
  • Turmeric/ Haldi Powder - 1 Teaspoon
  • Coriander/ Dhaniya Powder - 1 Teaspoon
  • Salt/ Namak - as per taste
  • Water - as required

Instructions

  1. TO PREPARE KAIR AND SANGRI-
  2. Boil saangri in water for 5 to 7 minutes and let it dry completely. Then soak it in water for 15 minutes.
  3. To prepare the kair berries, soak it in the buttermilk.
  4. TO PREPARE THE SABJI-
  5. Heat the oil and add onions to it. Mix it well.
  6. Add garlic, turmeric powder, red chili powder, coriander powder and salt in a bowl and add water to make a paste.
  7. Add the paste to the pan or the utensil and mix it well. Add 2-3 tablespoon water if required. Cook it well for 1 to 2 minutes.
  8. Add saangri and kair with the other ingredients and let it cook for 2 minutes by covering it.
  9. Kair Saangri Pyaaz Ki Sabji | Rajasthani Style is ready to be served.
