Kaju Paneer Masala is a lip-smacking dish.

Kaju Paneer Masala is a new variety of paneer dish. It is simple and easy to prepare and cook. The main ingredients are paneer cubes and cashew nuts. The tomato puree along with the spices makes it savory and relishing. The spices includes cumin seeds powder, coriander seeds powder, all spice mix powder, bay leaf and red chili powder. It tastes great with hot roti and rice. It becomes rich in taste as the frying of cashew nuts requires ghee. Also, addition of the milk cream, makes it a completely creamier and stomach filling dish. Ingredients

  • Cashew nuts - 10 to 15
  • Clarified butter/Ghee - 1 tablespoon
  • Oil - 1 tablespoon
  • Cumin seeds/Jeera - 1 teaspoon
  • Bay leaf/Tej patta - 1 no
  • Green chilies/Hari mirch - 2 slit
  • Ginger/Adrak - 1/2 inch finely chopped
  • Onion/Pyaz - 1 no finely chopped
  • Salt - to taste
  • Tomato/Tamatar - 3 no pureed
  • Kashmiri red chili powder/Lal mirch powder - 1/2 teaspoon
  • Turmeric powder/Haldi powder - 1/2 teaspoon
  • Cumin seeds powder/Jeera powder - 1 teaspoon
  • Coriander seeds powder/Dhania powder - 1 teaspoon
  • All spice mix powder/Garam masala - 1/2 teaspoon
  • Dry fenugreek leaves/Kasuri methi - to taste
  • Cottage cheese/Paneer cubes - 1 cup
  • Homemade malai/Milk cream - 1 to 2 tablespoon
  • Coriander leaves - to garnish

Instructions

  1. Make two equal parts of the 10 to 15 cashew nuts. Heat 1 tablespoon ghee and fry the cashew nuts on low flame. Stir in between and fry till it is brown in color.
  2. Heat 1 tablespoon oil in a kadhai, put the cumin seeds, bay leaf, slit green chili, finely chopped ginger and onion. Put some salt. Saute well on high flame till the onion is pinkish in color.
  3. Then, add the tomato puree and mix well. Put the kasmiri red chili powder, turmeric powder, cumin seeds powder and coriander seeds powder. Add salt to taste.
  4. Mix the gravy, cover and cook on low to medium for 5 to 7 minutes. The gravy will be ready, as the oil oozes out from it.
  5. Then, put the all spice mix powder, dry fenugreek leaves and mix well. Add the paneer cubes and then the fried cashew nuts. Put homemade malai, mix well and garnish with coriander leaves.
  6. The Kaju Paneer Masala is ready to be served.
