Keri Gunde Ki Sabzi is an easy and simple Rajasthani recipe.

Keri Gunde Ki Sabzi is very popularly made in almost all the households during mango season. It is very easy to make and tastes delicious when served with a meal. Gunda is also knows as Lasoda /Bhokar /Gum berry. It is full of Vitamins and helps with digestion. It is good for diabetic patients and helps to improve skin texture. Keri Gunde Ki Sabzi is also used as pickle and can be stored in the refrigerator. It is healthy as well as delicious. This is a seasonal sabzi and goes well with phulkas, paranthas, khakhra. Ingredients

  • Oil - 2 tablespoon
  • Cumin seeds/jeera - 1/2 teaspoon
  • Asafoetida/hing - a pinch
  • Kalonji/Nigella Seeds - 1/4 tablespoon
  • Onion - 1 big size finely chopped
  • Raw mango - 1 small size
  • Fenugreek/methi seeds - 1 small bowl boiled
  • Gunda /Lasoda /Bhokar /Gum berry - 1 small bowl boiled
  • Salt - as required
  • Turmeric powder - 1 teaspoon
  • Red chili powder - 1 teaspoon(as required)
  • Coriander powder - 2 teaspoon
  • Garam masala/mixed spice - 1/2 Teaspoon

Instructions

  1. Take gunda and boil it. Drain the water and deseed it. Keep it aside to cool down for about an hour.
  2. Take fenugreek seeds and boil it. Drain the water and keep it aside.
  3. Heat oil in a pan.
  4. Add cumin seeds, hing, kalonji, and onion to it. Mix it well.
  5. As the onion color changes to pink add raw mango to it. Mix well and cover the lid.
  6. Add boiled fenugreek seeds and mix them well. Cook it for 2 minutes.
  7. Now, add boiled gunda and mix it well.
  8. Add salt, turmeric powder, chili powder, and coriander powder. Mix it well.
  9. Sprinkle garam masala on it.
  10. Delicious Keri Gunde Ki Sabzi is ready to be served.
