Corn Paneer Pulao is a wonderful treat for lunch or dinner.

Corn Paneer Pulao is delicious and varied. It contains cooked rice, cottage cheese, corn kernels, green peas, onion, cashew nuts, and some spices. Cottage cheese is high in protein. Corn kernels reduce the risk of anemia. It is rich in Vitamin B12, folic acid, and iron. Green peas contain a decent amount of heart-healthy minerals, such as magnesium, potassium, and calcium. If you are bored with regular rice and would like to give some healthy twist then this is a very good option. Moreover, it is easy to make.  It is simple as well as healthy.   • Do not overcook vegetables, it should be crunchy.
  • You can use oil instead of clarified butter/ghee.
  • If you do not have green peas and corn kernels you can skip it.

Ingredients

  • Cooked Rice / Pake Hue Chaaval - 1 Cup
  • Cottage Cheese Cubes / Paneer Cubes - 1 Small Bowl
  • Green Peas / Matar and Corn Kernels / Makee Guthalee - 1 Small Bowl, Parboiled
  • Onion / Pyaaz - 1 Small, Sliced
  • Clarified Butter / Ghee - 1 Tablespoon
  • Cumin Seeds / Jeeera - 1 Teaspoon
  • Asafoetida / Heeng - 1 Pinch
  • Cardamom / Elaichi - 1
  • Cinnamon / Daal Cheeni - 1 Small Piece
  • Cloves / Lavang - 2
  • Grated Ginger / Adarak - 1/2 Inch
  • Green Chilli / Hari Mirch - 1 or 2 Finely Chopped
  • Cashew nuts / Kaju - 4 to 5 Chopped
  • Coriander Leaves / Dhaniya Patta - Handful Or As Required
  • Salt / Namak - To Taste

Instructions

  1. Heat a pan in full gas flame. Add clarified butter, cumin seeds and asafoetida in it.
  2. Now reduce the flame to medium and add cardamom, cinnamon and cloves. Saute it.
  3. Add grated ginger and finely chopped green chili. Saute it for few seconds.
  4. Then add onion and again saute it for few seconds. Then add cashew nuts and saute it.
  5. Now add cottage cheese, parboiled green peas and corn kernels.
  6. Saute it and then add salt and mix it well.
  7. Add few coriander leaves, mix it and then add cooked rice. Mix well.
  8. Spread remaining coriander leaves and mix it.
  9. Delicious 'Corn Paneer Pulao' is ready to be served.
