Khajoor Ki Chutney | Dates Chutney

Khajoor Ki Chutney | Dates Chutney is a lip-smacking chutney/ dip that is an integral part of any Indian Chaat/ Snack.

Khajoor Ki Chutney | Dates Chutney is a mix of tangy sweet and mildly spicy chutney that goes well with any Indian Chaat item made of dates and tamarind. Primarily made of dates, this chutney gets its tangy flavor from tamarind. This chutney goes well with most of the dishes as most of the street style chaat items are incomplete without this easy peasy chutney. Tangy and sweet this chutney makes an excellent accompaniment for snacks too.

Tips and suggestions by mom chef-

  • Once done with this, put it in an airtight container and deep freeze it. It stays good for six months. Whenever you wish to use it, ensure to bring it to room temperature and then use it.
  • Boiling the paste and adding the lemon juice helps to give the chutney a longer shelf life.
  • You can relish this chutney with Golgappe | Puri for Panipuri or Dahi Vada Flavorsome And Yummy Snack

Ingredients

  • OPTION 1-
  • Seedless Khajur/ Dates - 200 gms
  • Gud/ Jaggery - 1/2 cup
  • Imli/ Tamarind - 1/2 cup
  • Jeera/ Cumin seeds - 1 tablespoon
  • Dhaniya powder/ Coriander powder - 1 teaspoon
  • Namak/ Salt - as per taste
  • Laal mirch powder/ Red chilli powder - as per taste
  • Nimbu ras/ Lemon juice - 1 lemon
  • OPTION 2-
  • Khajoor/ Dates - 1/2 kilogram
  • Imli/ Tamarind - 1/2 cup
  • Gud/ Jaggery - 1/2 cup
  • Jeera/ Cumin seeds - 1 tablespoon
  • Laal Mirch powder/ Red Chilli powder - 1 and 1/2 Teaspoon or as per taste
  • Dhaniya Jeera powder/ Cumin and Coriander powder - 2 Tablespoon
  • Namak/ Salt - According to taste
  • Nimbu Ras/ Lime juice - 1 Lime
  • Paani/ Water - As required

Instructions

  1. OPTION 1-
  2. In a pressure cooker, add dates, tamarind, jaggery, and cumin seeds in it. Add water to the pressure cooker such that the water is a little above the ingredients and they will submerge in it. Let it cook for 4 whistles. Let it cool and transfer it to the bowl.
  3. Blend the mixture with a hand blender.
  4. Take another bowl and place a strainer over it. Strain the paste by pressing it properly through the strainer.
  5. Add the strained mixture to a kadai and let it boil.
  6. Add salt, red chilli powder, coriander powder, and lemon juice to the kadai and mix them well with the other ingredients. Let it boil on low flame for another 5 to 10 minutes and keep stirring it. Turn off the flame.
  7. Let it cool completely and then store it in an airtight container and store it in the deep freezer.
  8. OPTION 2-
  9. Take dates in a big saucepan.
  10. Now, add water (approximately 1 litre) till all the dates are completely submerged in water.
  11. Next, add tamarind, jaggery, and cumin seeds and let it boil for 12 minutes on a high flame.
  12. Keep stirring in between and checking if the dates have turned mushy and turn off the flame after 12 minutes.
  13. Now, let the mixture cool down completely and transfer small quantities into a blender.
  14. Once it is blended, strain it with the help of a strainer. The leftover pulp can be again blended with water to avoid wastage.
  15. Transfer the strained mixture in another saucepan on stove.
  16. Next, add red chilli powder, cumin and coriander powder, and salt and stir well. Also, add lime juice now.
  17. Simmer it and let it come to a boil.
  18. Let it cool down completely and store it in an airtight container in the deep freezer.

    I TRIED THIS… AND HONESTLY IT WAS HOTEL TASTE.. THE TASTE I WAS DIEING FOR . I AM HARD CORE FAN AND REALLY REGULAR FOLLOW ZKT BECAUSE IT GIVES ME EASY RECIPES WITH HOME INGREDIENTS.. LOVE YOU ALL MOM .. THANKS.
