Ingredients

  • Clarified butter / Ghee - 1 Tablespoon
  • Cumin seeds / Jeera - 1 Teaspoon
  • Asafoetida / Hing - A pinch
  • Ginger-green chilli paste / Adrakh-hari mirchi paste - 1 Teaspoon
  • Onion / Pyaaz - 1 Finely chopped
  • Tomato / Tamatar - 1 Finely chooped
  • Turmeric powder / Haldi powder - 1/2 Teaspoon
  • Red chilli powder / Lal mirch powder - 1/4 Teaspoon
  • Coriander powder / Dhaniya powder - 1 Teaspoon
  • Salt - As per taste
  • All spice mix powder / Garam masala - 1 Teaspoon
  • Bottle gourd / Lauki - 1/2 diced
  • Chana dal / Bengal Gram - 1 Cup
  • Water - As required
  • Coriander leaves / Hara dhaniya - A handful

Instructions

  1. Cut the bottle gourd. Keep bottle gourd in the water, after cutting.
  2. Soak chana dal for 2 hours. Keep it aside.
  3. Heat ghee in a pressure cooker. Add cumin seeds, asafoetida, ginger-green chilli paste, and onion. Mix well and saute it.
  4. Then add tomato. Mix well. Add turmeric powder, red chilli powder, coriander powder, salt, and all spice mix powder. Mix well.
  5. Now add bottle gourd. Mix well. Add soaked chana dal. Mix well.
  6. Add some water and bring it boil. Then close the lid of pressure cooker.
  7. Cook the sabji on high flame for 1 whistle. Then lower the flame and cook for 2 whistles.
  8. Then open the pressure cooker and transfer it into a serving bowl. Garnish it with coriander leaves.
  9. 'Lauki Chanadal Ki Sabji' is ready to be served.
