Lauki Kofta Curry | Lauki Kofta is a mouthwatering curry for everyone.

Lauki Kofta Curry | Lauki Kofta is quick and easy to prepare. It is very healthy and delicious curry made with curd based gravy. This goes well with hot chapati or roti or even with rice. Moreover, it does not require much ingredients and time for cooking. You just need basic spices, curd and lauki or bottle gourd. As we know lauki is very nutritious veggie but most of the people don’t like to eat this sabji. Everyone will love this kofta curry and they will enjoy it. So, try to make it at home and let us know your feedback.

This sabji was prepared by Nisha Samar – a lovely grandmom from Rajasthan.

Tips and Suggestions by Mom Chef:-

  • Squeeze the water from grated lauki/bottle gourd so that kofta will not turn soggy.
  • Add little gram flour to the grated lauki just for binding.
  • Fry the kofta on a medium flame for less time as lauki gets cooked faster.
  • You can use onion to make the gravy.

Ingredients

  • INGREDIENTS FOR KOFTA:-
  • Lauki/Bottle Gourd - 1/2 Cup grated
  • Besan/Gram Flour - 2 to 3 Teaspoon
  • Salt - as per taste
  • Red Chilli Powder -
  • Turmeric powder -
  • Oil - as required for frying
  • INGREDIENTS FOR GRAVY:-
  • Tomato - 1 big sized
  • Garlic - 2 cloves
  • Ginger - 1/2 inch piece
  • Green chilli - 1
  • Pudina/Mint Leaves - few
  • Curd - 1/4 Cup
  • Cumin seeds - 1/2 Teaspoon
  • Mustard seeds - 1/2 Teaspoon
  • Turmeric powder - 1/2 Teaspoon
  • Red Chilli Powder - 1/2 to 1 Teaspoon
  • Salt - as per taste
  • Ghee/Clarified butter - 1 Teaspoon
  • Coriander leaves - as required
  • Homemade Cream/Malai - as required for garnishing

Instructions

  1. PREPARING THE KOFTA:-
  2. Peel and grate the bottle gourd. Then squeeze the water completely. Keep the water aside.
  3. Add besan, turmeric powder, red chilli powder, salt. Mix well. Make small kofta out of the mixture.
  4. Meanwhile heat oil for frying.
  5. Add kofta for frying and keep one kofta aside for gravy. Fry kofta on a medium flame until light golden brown. Once done, take them out.
  6. PREPARING THE GRAVY:-
  7. Take a grinder jar and add chopped tomato, ginger, garlic, green chilli, mint leaves. Grind it to make paste.
  8. Heat ghee in a pan.
  9. Add mustard seeds and cumin seeds. Then add tomato paste and saute until the ghee leaves from the sides.
  10. Add red chilli powder, turmeric powder, salt to the curd. Mix well.
  11. Add curd mixture to the pan and keep stirring. Let it boil.
  12. Now, mix uncooked kofta with bottle gourd water and little water.
  13. Once the ghee leaves from the sides, add the above prepared mixture. Mix well and let it boil.
  14. Add kofta to the gravy and cook for a minute. Then switch off the flame. Transfer to the bowl. Garnish it with homemade cream and chopped coriander leaves.
  15. Delicious 'Lauki Kofta Curry | Lauki Kofta' is ready to be served.
