Litti Chokha | Bihari Litti Chokha is a very popular and a mouthwatering meal for all.

Litti Chokha | Bihari Litti Chokha is a traditional dish of Bihar. It is a complete meal which has litti, chokha, ghughni and Sarson chutney. Litti is prepared using whole wheat flour with a stuffing of Sattu (roasted gram flour mix). It is different from Baati (a famous dish of Rajasthan). There are many methods to cook the litti. You can use Gas tandoor or oven or can fry the litti. Traditionally it is cooked in the charcoal. Chokha uses potato and roasted tomato along with some spices. There are many variations available of chokha. The key ingredient of the Litti chokha is sarson oil or mustard oil which gives a distinct flavour to the dish.

These dishes along with Ghughni (a kind of chana/chickpea curry) and a chutney of mustard seeds make it a complete meal. This meal tastes so amazing that you will fall in love with these dishes. Tips and Suggestions by Mom Chef:-

  • Knead a semi-soft dough to make litti. You can use either oven or Gas tandoor to make litti instead of frying.
  • You can add spices according to your taste.
  • If you forgot to soak the black chickpeas/Kala chana for ghughni then soak them in hot water for a few minutes. Then pressure-cook it with an aluminium spoon for 8 to 10 whistle.
  • You can make chokha of roasted brinjal as well. Follow the same procedure to make it.

Ingredients

  • INGREDIENTS FOR LITTI:-
  • Gehu Aata/ Whole Wheat flour - 2 Cup
  • Namak/ Salt - as per taste
  • Kalonji/ Onion Seeds - 1/2 Teaspoon
  • Ajwain/ Carom Seeds - 3/4 Teaspoon
  • Tel/ Oil - 2 Tablespoon
  • INGREDIENTS FOR STUFFING OF LITTI:-
  • Sattu Aata - 1 Cup
  • Pyaaz/ Onion - 3 Tablespoon finely chopped
  • Crushed Lehsun-Adrak-Hari Mirch/ Garlic-Ginger-Green Chilli - 1 to 2 Teaspoon
  • Nimbu Ras/ Lemon Juice - 4 Teaspoon
  • Dhaniya Patta/ Coriander Leaves - a handful chopped
  • Namak/ Salt - as per taste
  • Roasted Jeera/ Cumin powder - 1 Teaspoon
  • Kalonji/ Onion Seeds - 1/2 Teaspoon
  • Ajwain/ Carom Seeds - 1/4 Teaspoon
  • Laal Mirch powder/ Red Chilli powder - as per taste
  • Garam Masala/ All-Spice mix - 1/2 Teaspoon
  • Sarson Ka Tel/ Mustard oil - 2 Teaspoon + for frying
  • INGREDIENTS FOR CHOKHA:-
  • Aloo/ Potato - 4 Boiled
  • Tamatar/ Tomato - 1
  • Pyaaz/ Onion - 2 Tablespoon finely chopped
  • Dhaniya Patta/ Coriander Leaves - a handful chopped
  • Kala Namak/ Black Salt - as per taste
  • Namak/ Salt - as per taste
  • Nimbu Ras/ Lemon Juice - 1 Teaspoon
  • INGREDIENTS FOR GHUGHNI:-
  • Kala Chana/ Black Chickpeas - 200 Gram soaked and boiled
  • Pyaaz/ Onion - 1 finely chopped
  • Tamatar/ Tomato - 2 finely chopped
  • Crushed Lehsun-Adrak-Hari Mirch/ Garlic-Ginger-Green Chilli - 1 to 2 Teaspoon
  • Dhaniya Patta/ Coriander Leaves - a handful chopped
  • Jeera/ Cumin seeds - 1 Teaspoon
  • Bay Leaf/ Tej Patta - 1
  • Haldi powder/ Turmeric powder - 1/2 Teaspoon
  • Dhaniya powder/ Coriander powder - 2 Teaspoon
  • Garam Masala/All-Spice mix - 1/2 Teaspoon
  • Laal Mirch powder/ Red Chilli Powder - 1/2 Teaspoon or as per taste
  • Sarso ka Tel/ Mustard oil - 2 Tablespoon
  • Tel/ Salt - as per taste
  • INGREDIENTS FOR CHUTNEY:-
  • Banarasi Sarson/ Mustard Seeds - 2 Tablespoon
  • Dahi/ Curd - 1 Cup
  • Lehsun/ Garlic - 4 to 5
  • Adrak/ Ginger - 1 inch piece - chopped
  • Hari Mirch/ Green Chilli - 2 to 3
  • Sattu Aata - 1 Tablespoon
  • Nimbu Ras/ Lemon juice - 1 Teaspoon
  • Namak/ Salt - as per taste
  • Kala Namak/ Black Salt - as per taste

Instructions

  1. PREPARING THE DOUGH FOR LITTI:
  2. In a bowl, add whole wheat flour, salt, kalonji, carom seeds, oil. Mix well, add water to make semi-soft dough (as we make for chapati). Keep aside.
  3. PREPARING THE STUFFING FOR LITTI:
  4. Mix all the ingredients listed for stuffing in a bowl. Keep aside.
  5. PREPARING THE LITTI:
  6. Divide the dough in to equal parts. (as we make balls for chapati). Flatten the dough with hands then stuff a spoonful of stuffing it. Seal it well and flatten a little bit.
  7. Meanwhile, heat mustard oil for frying. Then let it cool. Then heat it once again. This process will help to remove the strong smell of mustard oil.
  8. Now, fry the litti on a low flame until it turns nice golden brown all over. You can use gas tandoor or oven to roast the litti. Once done, take them out and keep aside.
  9. PREPARING CHOKHA:
  10. Apply oil on the tomato and roast it on a direct flame. Then let it cool completely. Then peel and grate it.
  11. Take a bowl and add mashed boiled potato, chopped onion, coriander leaves, salt, black salt, lemon juice and grated tomato. Mix well. The chokha is ready.
  12. PREPARING GHUGHNI:
  13. Heat mustard oil in a pan. Then add cumin seeds, bay leaf and let the seeds crackle.
  14. Add chopped onion and sauté it, add crushed ginger-garlic-green chilli. Mix well and sauté it until the onion turns translucent.
  15. Add chopped tomatoes. Mix well and cook on a medium flame.
  16. Now, add turmeric powder, coriander powder, garam masala, red chilli powder, salt. Mix well and cook.
  17. Add 1/4 cup water and cook the masala.
  18. Add boiled black chickpeas. Bring it to boil then let it cook for about 5 minutes. Then turn off the gas. Transfer to bowl and garnish it with coriander leaves.
  19. PREPARING MUSTARD/SARSON CHUTNEY:
  20. Grind mustard seeds, curd, garlic, ginger, green chilli, sattu aata to make smooth paste. Transfer to a bowl. Then add salt, black salt, lemon juice. Mix well.
  21. Delicious 'Litti Chokha | Bihari Litti Chokha' is ready to be served with Ghughni and chutney.
