Malai Kulfi | Shahi Malai Kulfi is a summer special dessert.

Malai Kulfi | Shahi Malai Kulfi is a delightfully easy and creamy treat. It is a famous traditional Indian sweet. This is rich in taste. You can easily prepare this kulfi in your kitchen from milk, whole wheat flour, sugar, and dry fruits. This kulfi recipe is very easy and does not take tons of time.   • The kulfi mixture should be cool down before adding it to a mold.

Ingredients

  • Milk - 500 ml + 2 to 3 tbsp
  • Whole wheat flour / Gehu ka aata - 1 tbsp
  • Sugar - 1/2 Cup
  • Pistachios flakes - 1 tsp + For garnishing
  • Almond flakes - 1 tsp + For garnishing
  • Cardamom powder / Elaichi powder - 1 tsp
  • Saffron / Kesar - 9 to 10 Strands
  • Water - As required
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Soak saffron in water for 15 minutes. Keep it aside.
  2. Take whole wheat flour in a bowl. Add milk and mix well to prepare a lumps-free slurry. Keep it aside.
  3. Boil 500 ml. milk in a pan for 10 minutes on medium flame. Stir it occasionally.
  4. Once it comes to a boil, then add the prepared whole wheat flour slurry. Mix well. Add sugar, almonds, pistachio, cardamom powder, and soaked saffron. Mix well.
  5. Keep the flame low and allow it to simmer. Keep stirring continuously.
  6. Keep scraping the sides of the vessel and mix it with the thickening milk. Keep this process for 20 to 25 minutes.
  7. The milk would have reduced considerably to a thick mass and created bubbles, which indicates that the kulfi mixture is ready.
  8. Turn off the flame and let it cool down. Then take a small glass and a small paper cup to set the kulfi.
  9. Now add almonds and pistachios to both molds. Then add the prepared kulfi mixture to them.
  10. Add almonds and pistachios on top of them. Cover the mold with aluminum foil. Now make a slit on the center of the mold. Add ice cream stick to it.
  11. Keep it in the freezer for 6 to 8 hours. Once set well, take it out of the freezer.
  12. Keep the glass mold in the water. Stir it for a few seconds. Rub the glass for a few seconds between your palms. Then unmold it.
  13. Cut the paper cup and unmold it also. Take out both kulfis on a serving plate and garnish it with pistachios.
  14. 'Malai Kulfi | Shahi Malai Kulfi' is ready to be served.
