Mango Custard Cake is a soft and perfect summer special dish. It is an easy and quick sweet dish. You can easily prepare this chilled cake with 2 layered elements. In addition, You can prepare this dessert in advance and serve it with a nice colorful topping to your guest within a few minutes. This recipe was prepared using Weikfield Custard powder (Mango Flavor) by a lovely Mom: Shveta Sheth

Tips and Suggestions by Mom Chef:

  • Use room-temperature or cold milk to add in the custard powder.
  • The ratio of water to sugar should be 2:1 for preparing sugar syrup.
  • The custard mixture and sugar syrup should be lukewarm while preparing the cake.
  • Use a broad and dip serving tray to prepare this cake.
  • If you want to cool the cake quickly, keep it in the freezer for 15 minutes.

Ingredients

  • FOR PREPARING CUSTARD MIXTURE :
  • Weikfield mango custard powder - 2 tbsp
  • Full fat milk - 500 ml. + 1 Cup
  • Sugar - 1/2 Cup
  • Fresh cream / Homemade malai - 2 tbsp (optional)
  • FOR PREPARING SUGAR SYRUP :
  • Sugar - 1 Cup
  • Water - 2 Cups
  • Cardamom powder / Elaichi powder - 1/2 tsp
  • FOR PREPARING MANGO CUSTARD CAKE :
  • Rusk / Toast - 16
  • Pistachios flakes - For garnishing
  • Almond flakes - For garnishing
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR PREPARING CUSTARD MIXTURE :
  2. Take weikfield custard powder in a bowl. Add 1 Cup of milk. Mix well to prepare a lumps-free slurry. Keep it aside.
  3. Boil milk in a pan. Boil it for 2 to 3 minutes on medium flame. Keep stirring continuously.
  4. Then add sugar and fresh cream. Mix well and let it boil for 3 to 4 minutes on low to medium flame. Keep stirring continuously.
  5. Now keep stirring continuously and add the prepared custard mixture. Boil it for 2 to 3 minutes on low flame till the mixture becomes creamy, thick, and shiny.
  6. Once done, Turn off the flame and let it cool down slightly. Keep it aside.
  7. FOR PREPARING SUGAR SYRUP :
  8. Take sugar in a pan. Add water and cardamom powder. Mix well. Boil it for 3 to 4 minutes on medium flame till the sugar melts. Stir it occasionally.
  9. Once done, turn off the flame and let it cool down slightly. Keep it aside.
  10. FOR PREPARING MANGO CUSTARD CAKE :
  11. Arrange 8 rusks vertically in a serving tray. Add the prepared sugar syrup to all rusks.
  12. Then add the prepared custard mixture to it. Likewise, prepare another layer on it. Lastly, garnish it with pistachios and almonds.
  13. Keep the serving tray in the refrigerator for 30 minutes. Then take it out and cut it. Transfer it to a serving plate.
  14. 'Mango Custard Cake' is ready to be served.
