Masala Baingan Fry is a nice flavourful sabji. 

Masala Baingan Fry is quick to prepare side dish with easily available ingredients from your kitchen. You just need brinjal, green chilli, and some spices to prepare this amazing sabji. In addition, you can serve it with jeera rice, paratha, naan, chappatis, or poori on special occasions. You can add brinjal to your diet with this interesting recipe. So, try this dish in your kitchen and share your valuable feedback with us.

Ingredients

  • FOR SHALLOW FRYING BRINJAL AND GREEN CHILLI :
  • Brinjal / Baingan - 7 to 8 Small sized
  • Mustard oil / Sarso ka tel - 3 tbsp
  • Green chilli / Hari mirchi - 3 to 4 Big sized
  • FOR PREPARING BAINGAN MIRCHI FRY :
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/2 tsp
  • Red chilli powder / Lal mirchi powder - 1 tsp
  • All spice mix powder / Garam masala - 1/2 tsp
  • Coriander powder / Dhaniya powder - 2 tsp
  • Water - 1 Cup
  • Oil - 2 tbsp
  • Asafoetida / Hing - A pinch
  • Cumin seeds / Jeera - 1/2 tsp
  • Tomato / Tamatar - 2 Chopped
  • Ginger / Adarak - 1 Inch
  • Garlic / Lahsun - 4 to 5 Cloves
  • Green chilli / Hari mirchi - 1 Chopped
  • Dry fenugreek leaves / Kasuri methi - 1 tsp
  • Coriander leaves / Hara dhaniya - A handful
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR SHALLOW FRYING BRINJAL AND GREEN CHILLI :
  2. Take washed brinjal. Make 2 slits like a cross on each one so that the base stays attached. Keep it aside.
  3. Make a vertical slit on each chilli. Keep it aside.
  4. Meanwhile, heat oil in a pan. Add the prepared brinjal. Cover the pan with a lid. Shallow fry it for 4 to 5 minutes on low flame until it becomes soft and nice golden brown from all sides. Stir it occasionally.
  5. Then add green chilli. Shallow fry it for 1 to 2 minutes on high flame.
  6. Once done, take it out to a plate and keep it aside.
  7. FOR PREPARING BAINGAN MIRCHI FRY :
  8. Take salt, turmeric powder, red chilli powder, all spice mix powder, coriander powder, and little water in a bowl. Mix well and prepare a lumps-free mixture. Keep it aside.
  9. Take tomato, ginger, green chilli, and garlic in a grinding jar. Grind it for a few seconds and prepare its puree. Keep it aside.
  10. Heat oil in a pan. Add asafoetida, cumin seeds, and the prepared spices mixture. Mix well. Stir it occasionally.
  11. Cook it for 1 to 2 minutes on high flame. Then add the prepared tomato puree. Mix well. Cook it for 2 to 3 minutes on high flame. Stir it occasionally.
  12. Now add dry fenugreek leaves by rubbing between your palms and coriander leaves. Mix well.
  13. Now add the fried brinjal and green chilli. Mix well. Garnish it with coriander leaves. Take it out to a serving bowl.
  14. 'Masala Baingan Fry' is ready to be served.
