Masale Bhat | Maharashtrian Masale Bhat is a delicious and spicy rice preparation.

Masale Bhat | Maharashtrian Masale Bhat is a traditional Maharashtrian one pot meal. This is spicy, flavourful and aromatic rice made in the pressure cooker. The Sona Masuri rice cooked with spices like Goda masala (special Maharashtrian Masala), ginger-green chilli and veggies like tindora or Coccinia, cauliflower and green peas. Tindora or Coccinia is a must for preparing the bhat. This is a no onion-no garlic recipe that means this recipe does not use onion and garlic. So, everyone can enjoy this mouthwatering meal. Goda Masala is a key ingredient and it gives a nice flavour to the dish. This rice preparation is so delicious that you will like to make it again and again. Tips and Suggestions by Mom Chef:-

  • Tindora or Coccinia or Tendli is a must so, do not avoid it. Moreover, you can add veggies of your choice.
  • You can substitute Goda Masala with Garam Masala if you are unable to find it.
  • Serve the bhat by garnishing it with ghee/clarified butter, fresh coconut and coriander leaves.

Ingredients

  • Sona Masuri Rice - 1 Cup
  • Water - 3 Cup
  • Jeera - 1/2 Teaspoon
  • Ginger-Green Chilli paste - paste of 2-3 Green chilli and 1/2 Inch piece of ginger
  • Curry leaves - few
  • Bay Leaf - 1 to 2
  • Goda Masala - 1 Teaspoon
  • Red Chilli Powder - as per taste
  • Turmeric powder - 1/2 Teaspoon
  • Coriander powder - 1 Teaspoon
  • Tindora/Coccinia/ivy gourd - 1/2 Cup chopped in rounds
  • Cauliflower florets - 1/2 Cup
  • Green Peas - 1/2 Cup
  • Cashew Nuts - 1/4 Cup
  • Salt - as per taste
  • Ghee/Clarified butter - 2 Teaspoon + for serving
  • Oil - 3 Tablespoon
  • Fresh or Dry Coconut - as required for garnishing
  • Coriander leaves - as required for garnishing

Instructions

  1. Wash and cut all the veggies.
  2. Take a pressure cooker, add oil and heat it.
  3. Add cumin seeds and let it splutter.
  4. Then add ginger-green chilli paste and saute it. Add curry leaves and bay leaf. Saute it. Lower the heat or switch off the gas.
  5. Add turmeric powder, goda masala, red chilli powder and coriander powder. Mix well.
  6. Now, switch on the gas. Add chopped tindora/Coccinia/ivy gourd, cauliflower florets and green peas. Mix well and saute for a minutes or 2.
  7. Then add washed sona masuri rice. Mix well and saute for a minute.
  8. Add 3 cups of water. Then add cashew nuts, salt and 2 teaspoon of ghee.
  9. Close the lid and pressure cook it for 3 whistles on a medium flame.
  10. Once done, switch off the gas. Let it cool on its own.
  11. Now, open the lid of pressure cooker. Mix the rice lightly.
  12. Take a serving plate, add masale bhat. Garnish it with ghee, fresh grated coconut and coriander leaves.
  13. Delicious 'Masale Bhat' is ready to be served.
