Tips and Suggestions by a Chef:

  • You can skip coriander leaves in the stuffing.
  • If using raw gram flour, roast it for 1 to 2 minutes more while roasting stuffing masala.
  • The ratio of maida to wheat flour should be 1:1.
  • You can prepare the dough with only maida or only wheat flour.

Ingredients

  • FOR RAW STUFFING :
  • Green peas / Green matar - 1 Cup
  • Coriander leaves / Hara dhaniya - A handful
  • Ginger-Green chilli paste / Adrakh-Hari mirchi paste - 1 Teaspoon
  • Dry coriander seeds / Sukha dhaniya - 1 Teaspoon crushed
  • Roasted cumin seeds powder / Roasted jeera powder - 1 Teaspoon
  • Fennel seeds / Saunf - 1 Teaspoon
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/2 Teaspoon
  • Red chilli powder / Lal mirch powder - 1 Teaspoon
  • All spice mix powder / Garam masala - 1 Teaspoon
  • Dry mango powder / Aamchur powder - 1 Teaspoon
  • Gram flour / Besan - 1 Tablespoon
  • FOR ROASTED STUFFING :
  • Clarified butter / Ghee - 1 Teaspoon
  • Green peas / Green matar - 1 Cup
  • Coriander leaves / Hara dhaniya - A handful
  • Ginger-Green chilli paste / Adrakh-Hari mirchi paste - 1 Teaspoon
  • Dry coriander seeds / Sukha dhaniya - 1 Teaspoon crushed
  • Roasted cumin seeds powder / Roasted jeera powder - 1 Teaspoon
  • Fennel seeds / Saunf - 1 Teaspoon
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/2 Teaspoon
  • Red chilli powder / Lal mirch powder - 1 Teaspoon
  • All spice mix powder / Garam masala - 1 Teaspoon
  • Dry mango powder / Aamchur powder - 1 Teaspoon
  • Gram flour / Besan - 1 Tablespoon
  • FOR DOUGH :
  • All purpose flour / Maida - 1 Cup
  • Wheat flour / Gehu ka aata - 1 Cup
  • Salt - As per taste
  • Carom seeds / Ajwain - 1 Teaspoon
  • Clarified butter / Ghee - 2 Tablespoons
  • Oil - As required

Instructions

  1. FOR RAW STUFFING :
  2. Roast gram flour in a pan, on medium flame for 8 to 10 minutes till the nice aroma of roasting starts to begin. Keep it aside
  3. Take peas, coriander leaves, and ginger-green chilli paste in a grinding jar. Grind coarsely and prepare its paste.
  4. Take out prepared gree peas mixture in a bowl. Add dry coriander seeds, roasted cumin seeds powder, fennel seeds. Mix well. Add salt, turmeric powder, red chilli powder, all spice mix powder. Mix well.
  5. Then add dry mango powder, roasted gram flour. Mix well. Then prepare small lemon-sized balls from stuffing. Keep it aside.
  6. FOR ROASTED STUFFING :
  7. Take peas, coriander leaves, and ginger-green chilli paste in a grinding jar. Grind coarsely and prepare its paste.
  8. Heat ghee in a pan. Add dry coriander seeds, roasted cumin seeds powder, fennel seeds. Roast them for 1 minute. Now add roasted gram flour. Roast them for 1 to 2 minutes.
  9. Now add salt, turmeric powder, red chilli powder, all spice mix powder, prepared green peas mixture. Mix well.
  10. Roast it on low flame for 8 to 10 minutes. Then prepare small ball-sized balls from stuffing. Keep it aside.
  11. FOR DOUGH :
  12. Take maida and wheat flour in a bowl. Add salt, carom seeds by rubbing between palms, ghee. Mix well.
  13. Add water gradually to knead the medium consistency dough. Cover it with a lid. Keep it aside and let it rest for 15 minutes.
  14. Take one small to medium portion of the dough. Hold in hands and spread with fingers and make a small poori.
  15. Now, place a ball of the filling on it. Fold from all sides. Close it and give it a round shape. Press lightly with palms. Apply oil on it with a brush. Likewise prepare all kachori.
  16. Now switch on the air fryer and turn on the frying option, set the timer for 20 minutes. Then set the temperature at 180 degrees Celsius.
  17. Open air fryer grill and Place kachori in it. Let it cook for 10 minutes. After 10 minutes open the air fryer grill and apply oil on all the kachori. Then let it bake for another 10 minutes.
  18. Once done, take out it on a serving plate.
