Ingredients

  • FOR PREPARING GRAVY :
  • Oil - 1 tbsp
  • Green chilli / Hari mirchi - 2 to 3 Chopped
  • Onion / Pyaz - 2 Finely chopped
  • Cashews / Kaju - 10 to 15
  • Tomato / Tamatar - 1 Finely chopped
  • Salt - As per taste
  • Water - As required
  • Turmeric powder / Haldi powder - 1/2 tsp
  • Red chilli powder / Lal mirchi powder - 1 tsp
  • Coriander powder / Dhaniya powder - 1 tsp
  • FOR SAUTEED FENUGREEK LEAVES :
  • Fenugreek leaves / Hari methi - 1 Cup chopped
  • FOR PREPARING METHI MALAI MATAR :
  • Oil - 1 tbsp
  • Black cardamom seeds / Badi elaichi ke dane - Of 1 cardamom
  • Cumin seeds powder / Jeera powder - 1/2 tsp
  • Green peas / Matar - 1 Cup parboiled
  • All spice mix powder / garam masala - 1/2 tsp
  • Cumin seeds powder / Jeera powder - 1/2 tsp
  • Milk - 1/2 Cup
  • Fresh cream / Homemade malai - 1 tbsp + For garnishing
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR PREPARING GRAVY :
  2. Heat oil in an iron pan. Add green chilli, onion, and cashews. Mix well. Saute it for 1 to 2 minutes on medium flame till it changes colour.
  3. Then add tomato, salt, and little water. Mix well. Now cover the pan and cook it for 2 to 3 minutes on medium flame.
  4. Further, add turmeric powder, red chilli powder, and coriander powder. Mix well. Once done, turn off the flame and let it cool down.
  5. Then transfer it to a grinding jar and grind it for a few seconds to prepare its gravy. Keep it aside.
  6. FOR SAUTEED FENUGREEK LEAVES :
  7. Take fenugreek leaves in a pan. Saute it for 2 to 3 minutes on low flame. Stir it occasionally. Once done, turn off the flame and keep it aside.
  8. FOR PREPARING METHI MALAI MATAR :
  9. Heat oil in a pan. Add black cardamom seeds, cumin seeds, and the prepared gravy. Mix well. Saute it for 1 to 2 minutes on medium flame.
  10. Then add green peas and mix well. Saute it for 1 to 2 minutes on medium flame.
  11. Now add sauteed fenugreek leaves. Mix well. Add all spice mix powder and cumin seeds powder. Mix well.
  12. Further, take 1 tsp of prepared sabji in a milk bowl. Mix well and add it to the pan. Mix well.
  13. Then add fresh cream and salt. Mix well. Boil it for 1 to 2 minutes.
  14. Once done, turn off the flame and take it out to a serving bowl. Garnish it with fresh cream.
  15. 'Methi Malai Matar | Dhaba Style Methi Matar Malai' is ready to be served.
