Ingredients

  • Oil - 2 Tablespoons
  • Cumin seeds / Jeera - 1 Teaspoon
  • Asafoetida / Hing - A pinch
  • Dry red chilli / Sukhi lal mirch - 2
  • Onion / Pyaz - 1 Finely chopped
  • Potato / Aloo - 1 Peeled and finely chopped
  • Capsicum - 1 Finely chopped
  • Carrot / Gajar - 1 Finely chopped
  • Beans - 1/2 Cup Finely chopped
  • Frozen peas / Matar - 1/2 Cup
  • Coriander leaves / Hara dhaniya - A handful
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/4 Teaspoon
  • All spice mix powder / Garam masala - 1/2 Teaspoon
  • Dry fenugreek leaves / Kasuri methi - 1 Teaspoon
  • Lemon juice / Nimbu ka ras - Of 1/2 lemon

Instructions

  1. Heat oil in a pan. Add cumin seeds, asafoetida, dry red chilli, and onion. Mix well and saute it for 1 to 2 minutes on medium flame.
  2. Add potato and salt. Mix well and cover the pan with a lid. Cook it for 1 to 2 minutes on medium flame. Stir it occasionally.
  3. Now add carrot. Mix well and cover the pan with a lid. Cook it for 1 to 2 minutes on medium flame.
  4. Then add peas, capsicum, and beans. Mix well and cover the pan with a lid. Cook it for 1 to 2 minutes.
  5. Add salt, turmeric powder, all spice mix powder, dry fenugreek leaves by rubbing between palms, and coriander leaves. Mix well.
  6. Once done, turn off the flame and add lemon juice. Mix well and take it out to a serving bowl.
  7. 'Mix Veg Dry | Vegetable Stir Fry' is ready to be served.
