Ingredients

  • Whole wheat flour / Gehu ka aata - 1 Cup
  • Salt - As per taste
  • Water - As required
  • Clarified butter / Ghee - As required
  • Carrot / Gajar - 1/2 Grated
  • Cottage cheese / Paneer - 1/4 Cup grated
  • Boiled potato / Aloo - 1 Peeled and grated (optional)
  • Coriander leaves / Hara dhaniya - A handful
  • Cabbage / Patta gobhi - 1/4 Cup grated
  • Chaat masala - 1/2 tsp
  • Black salt / Kala namak - 1/4 tsp
  • Dry mango powder / Amchur powder - 1/2 tsp
  • Red chilli powder / Lal mirch powder - 1/2 tsp
  • All spice mix powder / Garam masala - 1/4 tsp
  • Cucumber / Kheera - 1/2 Sliced for serving
  • Pickle / Achar - 1 tsp for serving
  • tsp = teaspoon

Instructions

  1. Take whole wheat flour in a bowl. Add salt and mix well. Add water gradually to prepare a medium-soft consistency dough.
  2. Add 1 tsp of ghee and knead it well. Cover the bowl and keep it aside.
  3. Take carrot, paneer, boiled potato, cabbage, coriander leaves, salt, chaat masala, black salt, amchur powder, red chilli powder, and all spice mix powder. Mix well. Divide it into 2 equal parts.
  4. Take a small ball sized wheat dough and make a round shaped circular peda from the dough. Dust it with flour and roll a peda to make a paratha.
  5. Then add the prepared veg paneer stuffing in the center. Join the edges and seal the paratha properly. Slightly press it with your hands. Dust it with flour. Then roll it with light hands and prepare the paratha.
  6. Meanwhile, heat a tawa. Place the prepared paratha on it and cook it on one side. Flip it, once it is slightly brown.
  7. Apply ghee on both sides and cook on a medium flame. Press the paratha while roasting, to make crispy and nicely golden brown paratha. Likewise, prepare another paratha.
  8. Once done, transfer it to a serving plate.
  9. 'Mix Veg Paneer Paratha' is ready to be served with cucumber and pickle.
