Mix Veg | Restaurant Style Mix Veg is a delicious and healthy curry. 

Mix Veg | Restaurant Style Mix Veg is a colourful and mouthwatering sabzi. This has veggies like carrot, beans, capsicum, green peas along with paneer. The veggies are cooked in the tomato-onion-cashew nut based gravy. Now, you can easily prepare this restaurant-style dish at home by following this simple recipe. You just need fewer ingredients which are easily available at home. This you can serve with roti, naan or paratha as your lunch and dinner. Moreover, this is a perfect option for any get-together and party. So, try to make it at home and enjoy this curry with your family and friends.

Ingredients

  • FOR THE GRAVY:-
  • Tomato - 2, roughly chopped
  • Onion - 1, roughly chopped
  • Cashew nuts/Kaju - 10 to 12
  • Kasuri Methi/Dry Fenugreek Leaves - 1 Teaspoon
  • Adrak/Ginger - 1/2 inch piece, chopped
  • Dalchini/Cinnamon - 1 small stick
  • Green Cardamom/Hari Elaichi - 2
  • Cloves/Laung - 2
  • Black peppercorns - 2
  • FOR MIX VEG:-
  • Paneer/Cottage Cheese Cubes - 100 grams
  • Diced carrot - 1/4 Cup
  • French beans - 1/4 cup chopped
  • Green peas - 1/4 cup
  • Capsicum - 1/4 cup, diced
  • Cumin seeds - 1 Teaspoon
  • Turmeric powder - 1/2 Teaspoon
  • Salt - to taste
  • Red Chilli Powder/Lal Mirch Powder - 1 Teaspoon
  • Coriander powder - 1 Teaspoon
  • Roasted Cumin/Jeera powder - 1/2 Teaspoon
  • Garam Masala/All Spice Mix - 1/2 Teaspoon
  • Kasuri Methi/Dry Fenugreek Leaves - 1/2 Teaspoon
  • Homemade Cream/Malai - 2 to 3 Tablespoon mixed with a little milk
  • Oil - 2 Tablespoon
  • Coriander leaves - as required for garnishing

Instructions

  1. FOR PREPARING THE GRAVY:- Boil 3 glass water in a pan. Then add roughly chopped tomato, onion, cashew nuts, kasuri methi, ginger, cinnamon, cardamom, cloves, black peppercorns. Let it cook on a high flame for 10 minutes. Then switch off the flame. Let it cool.
  2. Remove the whole spices. Then grind to make smooth paste. Strain the gravy using a sieve. Keep aside.
  3. FOR PREPARING THE SABZI:- Now, take another pan. Add oil and heat it.
  4. Add cumin seeds, turmeric powder. Then add diced carrot, chopped French beans, green peas, capsicum. Mix well and sauté.
  5. Add salt and mix well. Cook for 4 to 5 minutes. Add paneer cubes and sauté for a minute.
  6. Add ground and strained gravy. Mix well and cook.
  7. Add red chilli powder, coriander powder, roasted cumin powder, garam masala, kasuri methi. Mix well. Let it boil on a high flame for 5 to 7 minutes.
  8. Once it thickens then add the mixture of milk-homemade cream/malai. Mix well. Then turn off the flame.
  9. Delicious 'Mix Veg | Restaurant Style Mix Veg' is ready to be served. Garnish it with coriander leaves and serve hot.
