Moonglet | Munglet is a fluffy pancake. 

Moonglet | Munglet is a gluten free healthy dish. It is topped like a pizza with vegetables, seasoning and butter. This is a power packed dish that provides essential nutrients. Moong dal delivers lots of proteins and micro-nutrients. Also, prevents heart disease and hormonal imbalance. It is incredibly light and easy to digest. Ingredients

  • Yellow lentils / Moong dal - 1 Cup
  • Water - As required
  • Green chilli / Hari mirchi - 1 Chopped
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/2 tsp
  • Asafoetida / Hing - A pinch
  • Onion / pyaz - 1 tbsp Finely chopped
  • Capsicum / Shimla mirch - 1 tbsp Finely chopped
  • Sweet corn - 1 tbsp Boiled
  • Coriander leaves / Hara dhaniya - A handful
  • Ginger-garlic paste / Adarak-lahsun paste - 1/2 tsp
  • Oil - 1 tbsp
  • Clarified butter / Ghee - 1 tbsp
  • Fruit salt - 1/2 tsp
  • Beetroot / Chukandar - 1 tbsp Julienne
  • Carrot / Gajar - 1 tbsp Julienne
  • Red chilli powder / Lal mirch powder - As required
  • Butter - As required
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Wash and soak moong dal for 2 hours. Then strain the moong dal and transfer it to a grinding jar. Add green chilli and grind it for a few seconds to prepare a medium-thick consistency batter.
  2. Transfer it to a bowl and whisk it for a few seconds using a hand whisker. Then add salt, turmeric powder, and asafoetida. Mix well.
  3. Then add onion, capsicum, sweet corn, coriander leaves, and ginger-garlic paste. Mix well.
  4. Add little water to prepare medium thick consistency batter.
  5. Meanwhile, heat oil and ghee in a pan. Then add fruit salt to the batter. Add a little water to it. Mix well.
  6. Pour the batter into the pan and spread it like a big and thick pancake. Add beetroot, carrot, red chilli powder, and coriander leaves on it.
  7. Cover the pan with a lid and cook for 4 to 5 minutes on a high flame.
  8. Then flip it to cook the other side on low flame for 2 to 3 minutes.
  9. Once it is cooked from both sides, make vertical and horizontal slits on the middle part of the moonglet. Apply butter to it. Let it cook until crisp and golden brown. Then transfer it to a serving plate.
  10. 'Moonglet | Munglet' is ready to be served.
