Mungfali Wale Karele ki Sabzi is a mouthwatering and very healthy sabzi for all including kids. 

Mungfali Wale Karele ki Sabzi is a nutritious and the tastiest preparation. This has an amazing taste because of peanuts and jaggery with zero bitterness. Most of the people don’t like to eat karela as it is bitter in taste. This sabzi will not taste bitter because of its unique way of preparation. Follow these tips to make this delicious sabzi and you will love this karela/bitter gourd. It is very healthy and tasty as well. So, do try it out at your end and let us know your feedback.

Tips and Suggestions by Mom Chef:-

  • Marinate the karela and its peel in salt. Cover and keep it aside for at least 4 to 5 hours. Then wash them well and squeeze the water completely. Pate dry the karela and peels. This will reduce the bitterness.
  • Cut the bitter gourd/karela in smaller pieces. This will require very less oil to cook.
  • While cooking the karela, cook it on a low flame. Do not cover it while cooking else it will taste bitter.
  • Peanuts and jaggery add flavour and help to reduce the bitterness.

Ingredients

  • Karela/Bitter Gourd - 4 to 5 small sized
  • Onion - 1 finely chopped
  • Lemon - 1/2
  • Crushed Peanuts/Mungfali - 4 Teaspoon
  • Grated Jaggery/Gud - 2 Teaspoon
  • Turmeric powder - 1/4 Teaspoon
  • Coriander powder - 1 & 1/2 Teaspoon
  • Saunf/Fennel seeds powder - 1 Teaspoon
  • Red Chilli Powder - 1 Teaspoon
  • Asafoetida/Hing - a pinch
  • Cumin seeds - 1/2 Teaspoon
  • Salt - As per taste
  • Oil - 1 & 1/2 Tablespoon

Instructions

  1. Wash and peel the bitter gourd. Then remove the seeds. Apply the salt outside and inside of bitter gourd. Add salt to the peels as well. Transfer to the bowl, cover it and keep aside for 4 to 5 hours. Then wash the bitter gourd and its peels with water. then squeeze the water completely. Pat dry bitter gourd and peels with a cloth. Then cut the bitter gourd in small pieces.
  2. Now, heat oil in a pan or kadai.
  3. Add asafoetida then cumin seeds. Let the seeds crackle.
  4. Add chopped onion and saute it. Add salt and turmeric powder. Saute it on a low flame until it turns little brownish.
  5. Then add chopped bitter gourd. Mix well and cook on a low flame. Keep stirring in between.
  6. When the bitter gourd is half cooked (press it with a spoon, if it breaks then it is cooked) then add bitter gourd peels. Mix well and cook.
  7. Add red chilli powder, coriander powder, fennel seeds powder. Mix well and cook on low flame for 2 to 3 minutes. Keep stirring in between.
  8. Add crushed peanuts, mix well and saute for a minutes or until the bitter gourd is completely cooked.
  9. Then add jaggery, mix well. Add lemon juice to it. Mix well and then switch off the gas.
  10. Delicious 'Mungfali Wale Karele ki Sabzi' is ready to be served.
