Onion Rice is so simple and lip-smacking recipe.

Onion Rice is an easy rice recipe prepared with onion and flavored with fennel seeds and garam masala. It needs only minimal spices and ingredients. The fennel seeds add all the magic and flavor to this rice.  So always fry fennel seeds over medium-low heat. You can also use leftover rice for this recipe, but here we used freshly boiled rice. Ensure the rice is cooled down completely. If preparing for lunch, make the rice overnight and allow it to cool. And in the morning, prepare the simple onion masala and mix the rice. This onion rice is perfect for any day. When you are running out of vegetables or when the time is pressing, you can prepare this rice quickly. So, try to prepare it and share your feedback.

Tips and Suggestions by Mom Chef:

  • Care should be taken while frying the fennel seeds. If the oil is too hot and if you cook for a long time, it might taste bitter.
  • You can use fresh as well as leftover rice to prepare it.

Ingredients

  • Oil - 1 tablespoon
  • Mustard seeds - 1/2 teaspoon
  • Fennel seeds/saunf - 2 teaspoon
  • Green chili - 1/2 teaspoon chopped
  • Bay leaf - 1
  • Onion - 1 big sized Julienne
  • Turmeric powder - a pinch
  • Salt - as required
  • Rice - 1 cup
  • Ghee - 1 teaspoon
  • Water - 2 cups
  • Coriander leaves - 1/4 teaspoon
  • Roasted peanuts - 2 tablespoon
  • Mixed herbs - as required
  • Red chili flakes - as required

Instructions

  1. Take a bowl of rice and boil it. For boiling, add water, rice, salt, and ghee.
  2. Heat oil in a pan.
  3. Add mustard seeds and fennel seeds. Saute it.
  4. Add green chili, bay leaf, and onion. Saute it until onion color changes to pink. Keep the flame medium.
  5. Add turmeric powder, salt, and boiled rice. Saute it well.
  6. Add coriander leaves and roasted peanuts. Mix it.
  7. Add mixed herbs and red chili flakes.
  8. Delicious Onion Rice is ready to be served.
