Orange Chickpea Salad is a delicious salad. This is a blend of simple ingredients and a tangy dressing which gives a punch to a boring salad. You just need fewer easily available ingredients. Ingredients

  • Chickpeas - 100 g boiled
  • Cucumber - 1 diced
  • Boiled sweetcorn - 50 Gram
  • Onions - 2 diced
  • Pineapple pieces - as required diced
  • Green chilli - 1 chopped
  • Lemon - Juice of 1 lemon
  • Orange - Juice of 1 orange
  • Honey - 1 to 2 Tablespoon
  • Black pepper powder - 1 Teaspoon
  • Toasted peanut - 20 Gram
  • Toasted walnut - 20 Gram
  • Toasted musk melon seeds - 10 Gram
  • Salt - to taste

Instructions

  1. Boil chickpeas with 1 tablespoon of salt. Strain and keep it in fridge for a fresh cool taste.
  2. In a bowl, add boiled chickpeas, diced cucumber, onions, green chili, boiled corns and pineapple pieces. Mix well.
  3. Add toasted dry nuts and toss one more time.
  4. PREPARING THE DRESSING: In another bowl, add juice of orange and lemon along with honey. Whisk well for 10-15 seconds. Lastly, add dry spices for taste.
  5. Pour the dressing on the salad and mix well.
  6. Delicious 'Orange Chickpea Salad' is ready to be served cold.
