Panchkuta Ki Sabzi is a Rajasthani dish and very popular in the region.
Panchkuta means it primarily consists of five ingredients (Kair, Sangri, Kumatia, Gunda and Kachari/Aam chur/Raw dried mango slice). It is cooked together to prepare ‘Panchkuta Ki Sabzi’ and also popularly known as ker sangri. It tastes delicious with phulkas, rice, pudi, paratha, or chapathi. All these ingredients are dry and the weather in Rajasthan is generally dry, this is a common food item in a Jain Rajasthani cuisine.
