Ingredients

  • Onion / Pyaz - 2 Peeled
  • Tomato / Tamatar - 1
  • Oil - For frying + 1 & 1/2 tbsp
  • Cashew / Kaju - 8 to 10
  • Water - As required
  • Salt - As per taste
  • Ginger / Adarkh - 1 Inch chopped
  • Green chilli / Hari mirchi - 1 Chopped
  • Fresh cream / Malai - 1 tbsp + 2 tbsp
  • Black peppercorns / Kali mirch - 2
  • Cloves / Laung - 2
  • Cardamom / Elaichi - 1
  • Bay leaf / Tej patta - 1
  • Cinnamon / Dal chini - 1 Stick
  • Dry red chilli / Sukhi lal mirchi - 1
  • Cumin seeds / Jeera - 1 tsp
  • Asafoetida / Hing - A pinch
  • Turmeric powder / Haldi powder - 1/2 tsp
  • Red chilli powder / Lal mirch powder - 1 tsp
  • All spice mix powder / Garam masala - 1 tsp
  • Dry fenugreek leaves / Kasuri methi - 1 tsp
  • Milk - 1/2 Cup (optional)
  • Coriander leaves / Hara dhaniya - A handful + For garnishing
  • Cottage cheese / Paneer - 1 Cup diced
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Soak cashew in lukewarm water for 10 minutes. Keep it aside.
  2. Heat oil in a deep frying pan. When the oil is hot, add tomato and onion. Fry them on a medium flame for 2 to 3 minutes.
  3. Deep fry onion and tomato until they become light golden brown from all sides. Then, take them out on tissue paper to soak extra oil. Keep it aside and let it cool down. Peel fried tomato.
  4. Then chop onion and tomato. Transfer them to a grinding jar. Add salt, soaked cashews, ginger, green chilli, and 1 tbsp of fresh cream. Grind them to make a puree. Keep it aside.
  5. Heat oil in a pan. Add black peppercorns, cloves, cardamom, cinnamon, bay leaf, dry red chilli, cumin seeds, asafoetida, and prepared puree. Mix well.
  6. Add turmeric powder, red chilli powder, all spice mix powder, and a little salt. Mix well and saute it for 1 to 2 minutes.
  7. Then add dry fenugreek leaves by rubbing between palms, milk, 2 tbsp of fresh cream, and coriander leaves. Mix well. Saute it for 2 to 3 minutes on medium flame.
  8. Add paneer and mix well. Bring it to a boil then turn off the flame and take it out to a serving bowl.
